Vainilla, cajeta, Jamaica, chocolate, caf\u00e9, frutas, nueces\u2026 cualquier sabor que se te antoje. Tersa o espesa, cremosa o espumosa, ligera\u2026 la textura que quieras, y ni siquiera hemos llegado a las formas. \u00bfA tu hijo le gusta Spiderman, a tu mam\u00e1 las flores y a ti un dise\u00f1o m\u00e1s sencillo?<\/p>\n<p>Si no te gusta la gelatina, tienes que probar las que hacen en M\u00e9xico. Olv\u00eddate de las ensaladas de gelatina de los \u00b450s y de las que sirven en los hospitales.<\/p>\n<p>La gelatina mexicana es para celebrar y presumir.<\/p>\n<p>Muchas veces vienen en porciones individuales con diferentes sabores en capas coloridas. Las ofrecen vendedores ambulantes, quienes las llevan en casetas de vidrio de 2 \u00f3 3 pisos, y son muy comunes en las gasolineras, mientras uno espera su turno. Ahora saben por qu\u00e9 iba siempre con mi pap\u00e1 a llenar el tanque de gasolina.<\/p>\n<p>Casi siempre est\u00e1n presentes en las fiestas infantiles y en las de adultos, en versiones m\u00e1s sofisticadas con ron, tequila o rompope. Tambi\u00e9n las puedes encontrar en pasteler\u00edas y supermercados. Hay incluso chefs que hacen gelatinas con complicados dise\u00f1os florales y abstractos.<\/p>\n<p>En las casas, la gelatina es de rigor. Es sencilla, f\u00e1cil de hacer, saludable y se pueden usar los ingredientes de temporada.<\/p>\n<p>El secreto est\u00e1 en usar grenetina, que se puede encontrar en cualquier supermercado aqu\u00ed y en China. As\u00ed es.<\/p>\n<p>La primera capa de esta gelatina primaveral es de tres leches: leche entera, evaporada y condensada. Se calientan y el resultado es cremoso, casi como una natilla.<\/p>\n<p>La siguiente capa es de fresas. El jugo queda muy bien con las fresas y es una buena contraparte a la capa cremosa de tres leches.<\/p>\n<p>No es necesario ponerles az\u00facar a las fresas, con las tres leches es suficiente, y como se comen juntas, se mezclan e integran y el az\u00facar ya no es necesaria.<\/p>\n<p>Como la gelatina es muy vers\u00e1til, puedes alterar el orden de las capas. Algunas gelatinas que hice comenzaban con la capa de tres leches y otras con la de fresas.<\/p>\n<p>Us\u00e9 vasos de pl\u00e1stico, pr\u00e1cticos y transparentes, para ver las capas y hacer m\u00e1s divertida a la gelatina. Vierte la primera capa y refrigera hasta que cuaje, luego vierte la segunda capa y deja que cuaje tambi\u00e9n. Sube el fuego a medio-alto para que vuelva a hervir, luego reduce a medio-bajo y deja que hierva por 5 minutos m\u00e1s. Retira del fuego y vierte la mezcla de tres leches en un recipiente grande.<\/div><\/li><li id=\"wprm-recipe-9502-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Vierte 1\/2 taza de agua tibia en un recipiente mediano y a\u00f1ade los 2 sobres de grenetina. Revuelve hasta incorporar, y deja reposar la mezcla hasta que se esponje (aumentar\u00e1 un poco de volumen y parecer\u00e1 que se est\u00e1 endureciendo), de 4 a 5 minutos. Mientras, en una olla peque\u00f1a pon de 5 a 8 cm de agua a fuego medio-bajo. Pon el recipiente con la mezcla de grenetina encima de la olla con el agua hirviendo, es decir, un ba\u00f1o Mar\u00eda. D\u00e9jala ah\u00ed, revolviendo ocasionalmente, hasta que la grenetina se haya disuelto por completo y la mezcla tenga un ligero color \u00e1mbar, de 3 a 4 minutos. Ret\u00edrala del fuego.<\/div><\/li><li id=\"wprm-recipe-9502-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Vierte la grenetina disuelta al recipiente con la mezcla de tres leches y revuelve.<\/div><\/li><li id=\"wprm-recipe-9502-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para preparar la gelatina de fresa: vierte el jugo a un recipiente grande. Repite el mismo proceso para mezclar y disolver la gelatina descrito en el p\u00e1rrafo de arriba. Vierte la grenetina disuelta en el jugo y revuelve para mezclar bien.<\/div><\/li><li id=\"wprm-recipe-9502-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para preparar las capas de gelatina de tres leches y la de fresa: en tazas de pl\u00e1stico o moldes individuales para gelatina, usa una taza medidora o jarra peque\u00f1a para llenar 1\/3 de cada taza con la gelatina de tres leches. Refrigera las tazas hasta que la gelatina cuaje (se vea s\u00f3lida y no se tire cuando muevas la taza), de 20 a 30 minutos. No refrigeres los recipientes con el resto de la mezcla de gelatinas de tres leches y de jugo.<\/div><\/li><li id=\"wprm-recipe-9502-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Saca las tazas del refrigerador y vierte la mezcla de jugo encima de la de tres leches, rellenando otro tercio de la taza, y a\u00f1ade algunos trozos de fresas. Tapa con pl\u00e1stico y refrigera al menos por 2 horas antes de servir.<\/div><\/li><li id=\"wprm-recipe-9502-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">(Puedes jugar con las capas de gelatina y agregar las que quieras, ya sea una o diez, y qu\u00e9 tan gruesas las quieres. Decide tambi\u00e9n con qu\u00e9 sabor quieres empezar, y repite el proceso hasta que te acabes las dos mezclas.)<\/div><\/li><li id=\"wprm-recipe-9502-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Si quieres usar un solo molde de 20-25 cm, ll\u00e9nalo hasta la mitad con la mezcla de tres leches y refrig\u00e9ralo hasta que cuaje, de 20 a 30 minutos. Vierte luego la mezcla de jugo encima y pon los trozos de fresa con cuidado. Refrigera la gelatina por al menos 2 horas antes de servir.
