Luego viene la capa de galleta crujiente. Es un contraste muy rico y tienes que seguir comiendo galletas para entenderlo bien.<\/p>\n<p>\u00bfVes? Otra dulce creaci\u00f3n de las monjas del Convento de Santa Clara en Puebla, cuya receta ha pasado de generaci\u00f3n en generaci\u00f3n. Junto con las monjas del Convento de Santa Rosa (donde se cree que se invent\u00f3 el Mole Poblano) y el Convento de Santa M\u00f3nica (donde crearon los Chiles en Nogada), crearon muchos de los platillos barrocos que mezclan ingredientes europeos y mexicanos con mucha pasi\u00f3n y devoci\u00f3n, y que le dieron forma a la comida de esa ciudad y a la del resto del pa\u00eds.<\/p>\n<p>Las monjas de Santa Clara son las m\u00e1s famosas por sus dulces. Hay much\u00edsimas dulcer\u00edas a lo largo de esas dos cuadras.<\/p>\n<p>Estuvimos ah\u00ed hace poco para filmar el Episodio de Puebla de la Temporada 2. Hay tres tama\u00f1os: chicas, medianas y grandes. Yo prob\u00e9 muchas versiones en mi cocina, y d\u00ed con una receta en la que puedes usar cualquier molde redondo para galletas, y tiene una forma m\u00e1s f\u00e1cil de hacer el glaseado.<\/p>\n<p>Vamos a empezar por ah\u00ed.<\/p>\n<p>El glaseado se hace con semillas de calabaza, y aunque algunas empresas lo han tratado de hacer con az\u00facar glass, los conocedores sabemos la diferencia. Desde \u00e9pocas coloniales, las monjas espa\u00f1olas trataron de replicar los dulces que conoc\u00edan, solo que con los ingredientes que ten\u00edan a la mano. As\u00ed que usaron las semillas de calabaza para hacer mazap\u00e1n en lugar de las almendras, y as\u00ed naci\u00f3 el dulce de pepita que fue todo un \u00e9xito. El siguiente paso es usar este dulce para cubrir la galleta.<\/p>\n<p>La parte laboriosa de hacer el glaseado es porque las pepitas peladas son verdes. Si la dejas, el glaseado es igual de bueno que el blanco, pero de color verde claro. Puedes tratar de usar el m\u00e9todo de las monjas de Santa Clara para tener pepitas blancas, pero si no quieres pasar horas intent\u00e1ndolo, lo que puedes hacer es usar almendras blancas rebanadas.<\/p>\n<p>Sin importar la nuez que uses, si est\u00e1 pelada o no, primero hay que molerlas en la procesadora o licuadora. Si no, no te preocupes. Extiende la masa y usa un molde redondo. Espera hasta que se hayan enfriado completamente, o el glaseado se correr\u00e1. class=\"wprm-recipe-ingredient\" style=\"list-style-type: disc;\"><span class=\"wprm-recipe-ingredient-name\">Para blanquear las pepitas:<\/span><\/li><li class=\"wprm-recipe-ingredient\" style=\"list-style-type: disc;\"><span class=\"wprm-recipe-ingredient-amount\">1\/2<\/span>&#32;<span class=\"wprm-recipe-ingredient-unit\">cucharadita<\/span>&#32;<span class=\"wprm-recipe-ingredient-name\">de polvo para hornear o de bicarbonato de sodio<\/span><\/li><\/ul><\/div><\/div>\n    <\/div>\n    <div class=\"single-recipe__body__right\">\n      <div class=\"wprm-recipe-instructions-container wprm-recipe-9523-instructions-container wprm-block-text-normal\" data-recipe=\"9523\"><h3 class=\"wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Para preparar<\/h3><div class=\"wprm-recipe-instruction-group\"><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-9523-step-0-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para preparar las galletas: con la batidora, bate la mantequilla a velocidad media hasta que est\u00e9 cremosa. Reduce la velocidad a la m\u00e1s baja y a\u00f1ade con cuidado el az\u00facar glass y el polvo para hornear. Sigue batiendo hasta que todos los ingredientes queden bien mezclados.<\/div><\/li><li id=\"wprm-recipe-9523-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">A\u00f1ade la harina, una taza a la vez, y luego las yemas una por una. Contin\u00faa batiendo por 1 minuto. A\u00f1ade el agua y sigue batiendo hasta que la masa est\u00e9 suave y puedas hacer una bola con ella. Envuelve la masa en pl\u00e1stico y refrig\u00e9rala. Deja que se enfr\u00ede hasta que quede firme y se pueda manejar, por lo menos 1\/2 hora (puedes refrigerar la masa hasta un par de d\u00edas).<\/div><\/li><li id=\"wprm-recipe-9523-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Cuando est\u00e9s lista para hornear las tortitas, precalienta el horno a 190 C y cubre una charola para hornear con papel encerado.<\/div><\/li><li id=\"wprm-recipe-9523-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pon la mitad de la masa en un pedazo de papel encerado espolvoreado ligeramente con harina. A\u00f1ade un poco m\u00e1s de harina encima de la masa y luego ponle otro pedazo de papel encerado. Usando un rodillo, extiende la masa con cuidado, hasta que tenga un grosor de unos .60 cm. Retira el papel encerado de encima y corta c\u00edrculos con un molde para galletas redondo de 8 cm. Con un molde para galletas m\u00e1s peque\u00f1o, has una depresi\u00f3n circular en la mitad de cada galleta, sin cortar por completo la masa (debe quedar un espacio de .60 cm entre la depresi\u00f3n y la orilla de cada galleta). Presiona las orillas de cada galleta con un tenedor, como si hicieras las orillas de un pay. Repite todo el proceso con el resto de la masa, extendi\u00e9ndola hasta obtener el mayor n\u00famero de galletas posible.<\/div><\/li><li id=\"wprm-recipe-9523-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Acomoda las galletas en una charola para que tengan al menos .60 cm entre cada una y horn\u00e9alas durante unos 10 minutes, hasta que est\u00e9n totalmente cocidas y ligeramente caf\u00e9s abajo. Retira las tortitas del horno y d\u00e9jalas enfriar. Hornea de igual forma el resto de las galletas.<\/div><\/li><li id=\"wprm-recipe-9523-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para preparar la base del glaseado: para hacer el glaseado blanco de pepitas como tradicionalmente lo hac\u00edan las monjas del Convento de Santa Clara, hay que preparar las pepitas de la siguiente manera:<\/div><\/li><li id=\"wprm-recipe-9523-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pon a hervir agua en una olla peque\u00f1a y a\u00f1ade las pepitas, deja hervir a fuego bajo unos 5 minutos y apaga el fuego. Deja enfriar, a\u00f1ade el bicarbonato o el polvo para hornear y deja reposar las pepitas toda la noche. Con tus dedos, frota las pepitas para quitarles la piel, la cual quedar\u00e1 flotando en el agua. Con cuidado, escurre el agua, cubre las pepitas con agua limpia y enjuaga otra vez. Con una toalla limpia, vuelve a frotar las pepitas para retirar la piel que les haya quedado. Luego, pon las pepitas en un recipiente, c\u00fabrelas con agua, enjuaga y ponlas en una toalla o servilletas de papel para que se sequen.<\/div><\/li><li id=\"wprm-recipe-9523-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para hacer el glaseado verde de pepitas, que es mucho menos laborioso, prepara las pepitas de la siguiente manera:<\/div><\/li><li id=\"wprm-recipe-9523-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pon las pepitas en la licuadora o procesador y mu\u00e9lelas completamente.<\/div><\/li><li id=\"wprm-recipe-9523-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para hacer el glaseado blanco con las almendras, que es todav\u00eda m\u00e1s f\u00e1cil, s\u00f3lo pon las almendras ya blanqueadas y fileteadas en la licuadora o procesador y mu\u00e9lelas completamente.<\/div><\/li><li id=\"wprm-recipe-9523-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para preparar el glaseado: calienta el az\u00facar y 1\/4 de taza de agua en una olla mediana a fuego bajo. Cocina hasta que el az\u00facar se haya derretido completamente en el agua y parezca un jarabe ligero, de unos 8 a 10 minutos.<\/div><\/li><li id=\"wprm-recipe-9523-step-0-11\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">A\u00f1ade las pepitas o las almendras molidas y revuelve bien, para crear una pasta espesa. Deja cocinar la mezcla unos 3 \u00f3 4 minutos m\u00e1s \u2014 se espesar\u00e1 y se har\u00e1 a\u00fan m\u00e1s pastosa. Apaga la lumbre, a\u00f1ade la leche y revuelve bien. La mezcla estar\u00e1 espesa pero m\u00e1s brillosa y un poco m\u00e1s l\u00edquida.<\/div><\/li><li id=\"wprm-recipe-9523-step-0-12\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Retira la mezcla de la lumbre y deja enfriar completamente hasta que se espese un poco y se pueda poner en una galleta sin que se derrame. Se spread mientras se asienta, pero si se ha enfriado lo suficiente no se correr\u00e1, pero antes de que se haya enfriado completamente y se endurezca.
