Puede sonar raro comer plan esponjoso con az\u00facar en forma de huesos, pero tambi\u00e9n comemos calaveritas dulces, lo que muestra lo importante que es la comida para nosotros, y como la mezclamos con nuestro sentido del humor sarc\u00e1stico, generosidad y gusto por la vida.<\/p>\n<p>Aunque no es muy popular aqu\u00ed en los Estados Unidos, veo que se reconoce cada vez m\u00e1s. Se est\u00e1 poniendo de moda, los maestros ya hablan del D\u00eda de Muertos en las escuelas, hay calaveritas y decoraciones en las tiendas. Como es justo despu\u00e9s de Halloween, se mezclan elementos de ambos, como cementerios y mucha comida, pero no son iguales.<\/p>\n<p>El D\u00eda de Muertos es en realidad dos, el 1 y 2 de noviembre, cuando los muertos regresan a visitar a los vivos. Y si ya hicieron todo el viaje, m\u00e1s vale que la comida est\u00e9 a la altura de la ocasi\u00f3n. Se montan y decoran altares con la comida y bebida favorita del difunto y velas y flores para iluminarles el camino de regreso. Tambi\u00e9n visitamos los cementerios, pero no para asustar como en Halloween. La masa se tiene que levantar cuatro veces, una de ellas toda la noche en el refrigerador. Si quieres Pan de Muerto para el viernes, tienes que empezar el jueves.<\/p>\n<p>Primero, haces una mezcla de masa con levadura. Las versiones m\u00e1s viejas del Pan de Muerto usaban pulque, una bebida fermentada. Yo uso levadura seca con leche tibia para que la levadura reaccione. Disu\u00e9lvela en la leche y agrega un poco de harina, para que reaccione m\u00e1s fuerte. Yo le agrego agua de azahar, tradicional en muchas partes de M\u00e9xico ya que la hace fragante y ligera. Tambi\u00e9n le pongo un poco de ralladura de naranja y semillas de an\u00eds, que le dan m\u00e1s aroma. Agrega la levadura a la masa. T\u00e1pala y ponla en un molde.<\/p>\n<p>Es mejor si la dejas en un lugar c\u00e1lido de la cocina donde no haya corrientes de aire, junto a la estufa o a las hornillas. Algunos a\u00f1aden m\u00e1s decoraciones como az\u00facar pintada, o hacen formas m\u00e1s elaboradas con la masa. A m\u00ed me gusta hacerlo redondo con az\u00facar blanca.<\/p>\n<p>Para el d\u00eda siguiente, tendr\u00e1s pan de muerto listo para comer.<\/p>\n<p>Aunque toma mucho tiempo hacer el pan de muerto, te da mucha satisfacci\u00f3n hacerlo, aparte de que mientras lo horneas, tu familia se ir\u00e1 acercando a la cocina para ver qu\u00e9 es lo que huele tan rico.<\/p>\n<p><img loading=\"lazy\" Tambi\u00e9n las semillas de an\u00eds y una pizca de sal. La masa se ver\u00e1 mojada, aguada y pegajosa, sigue batiendo de 7 a 10 minutos, hasta que se separe de los lados del recipiente. Pon la masa en el recipiente, t\u00e1pala con una toalla de cocina y ponla en el lugar m\u00e1s c\u00e1lido de la cocina, donde no haya corrientes de aire y lejos de ventanas y puertas. Deja que se levante durante 2 o 3 horas, hasta que duplique su tama\u00f1o.<\/div><\/li><li id=\"wprm-recipe-9520-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Dale un golpe con el pu\u00f1o, volt\u00e9ala, t\u00e1pala con pl\u00e1stico y refrigera toda la noche. Al d\u00eda siguiente, qu\u00edtale el pl\u00e1stico, ponle una toalla de cocina encima y deja que llegue a temperatura ambiente.<\/div><\/li><li id=\"wprm-recipe-9520-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Separa un tercio de la masa para hacer las decoraciones: una bola de 3 a 5 cm, y el resto para hacer dos tiras de masa. No tienen que quedar perfectas, ya que la masa est\u00e1 muy pegajosa, y se ver\u00e1n muy bien ya horneadas y cubiertas de az\u00facar.<\/div><\/li><li id=\"wprm-recipe-9520-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Engrasa una charola para hornear o piedra para pizza, y haz una bola con el resto de la masa. Ponla en el centro de una charola para hornear y aplana un poco arriba. Pon las tiras de masa para hacer una X y pon la bola justo donde se cruzan. Tapa el pan con una toalla para cocina y deja que se esponje otra vez, de 1 a 2 horas.<\/div><\/li><li id=\"wprm-recipe-9520-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Precalienta el horno a 175 C. Hornea el pan durante unos 35 minutos. A la mitad del tiempo, cubre el pan con papel encerado o pergamino para que no se dore demasiado.<\/div><\/li><li id=\"wprm-recipe-9520-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Estar\u00e1 listo cuando suene hueco el fondo del pan si le das unos golpecitos.<\/div><\/li><li id=\"wprm-recipe-9520-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Derrite la mantequilla y \u00fantala en todo el pan.
