XVII, era cocinar la calabaza completa en un Tompiate (una canasta de hojas de palma tejidas) durante horas, hervirla en agua con cal para que no se le cayera la c\u00e1scara, y luego hervirla durante horas en el jarabe y ponerla al sol muchas horas m\u00e1s.<\/p>\n<p>Era demasiado laborioso y ca\u00f3tico. Hay que tomar en cuenta que no exist\u00eda la refrigeraci\u00f3n, pero los tiempos han cambiado, ya no se necesita ni el tompiate ni el agua con cal. Si encuentras piloncillo o panela, le dar\u00e1s ese sabor r\u00fastico y de pueblo chico tan rico. llevan estos ingredientes, pero la m\u00eda s\u00ed.<\/p>\n<p>Deja que el piloncillo o az\u00facar morena o mascabada se disuelva en el agua antes de a\u00f1adir la calabaza.<\/p>\n<p><img en pedazos de 8&#215;8 cm.<\/p>\n<p>T\u00fa decides si le dejas las semillas y las fibras. Algunos se las quitan, pero yo se las dejo. Ahora solo tienes que esperar a que se cueza. Vierte el agua encima. Agrega la canela, la c\u00e1scara y el jugo de naranja. Calienta a fuego medio hasta que suelte el hervor, revolviendo ocasionalmente hasta que se disuelva el piloncillo y se haga un jarabe muy ligero. De 10 a 15 minutos.<\/div><\/li><li id=\"wprm-recipe-9604-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Mientras, lava y enjuaga la calabaza. C\u00f3rtala en pedazos grandes, de 8x8 cm. Yo le dejo las fibras y las semillas. Con un cuchillo, haz cortes en la c\u00e1scara para que la pulpa absorba el jarabe.<\/div><\/li><li id=\"wprm-recipe-9604-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Una vez que se derrita el piloncillo, retira la olla del fuego para poner la calabaza. Acomoda los pedazos de calabaza, con una primera capa con la c\u00e1scara hacia abajo y encima otra capa con la c\u00e1scara hacia arriba.<\/div><\/li><li id=\"wprm-recipe-9604-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Tapa la olla y calienta a fuego medio-bajo durante 1 hora y media. Destapa y cocina durante media hora, hasta que la calabaza tenga color caf\u00e9 oscuro y haya absorbido el jarabe. Apaga el fuego y deja que se enfr\u00ede y acabe de absorber el resto del jarabe, lo que quede se espesar\u00e1. La puedes servir tibia y dejar que se enfr\u00ede y refrigerarla.
