Todos venimos de diferentes partes del pa\u00eds, con nuestros modos, influencias y opiniones que gritamos a los cuatro vientos cada vez que tratamos de servir la mejor comida posible en cada evento. Aunque nos ponemos nerviosos cuando cocinamos para nuestros invitados, nos relajamos completamente cuando preparamos comida para nosotros. Nos vamos turnando, y la semana pasada le toc\u00f3 a Julio, un antiguo cocinero en una taquer\u00eda mexicana. Ten\u00eda muchas ganas de probarla sus alb\u00f3ndigas, ya que su t\u00eda Maricruz me hab\u00eda platicado lo buenas que son. \u201cDe veras, de veritas Pati\u201d, me dijo, \u201chace las alb\u00f3ndigas m\u00e1s ricas de todas\u201d.<\/p>\n<p>Mientras ve\u00eda c\u00f3mo las preparaba Julio, le pregunt\u00e9 sobre las cosas que no me gustaban de ellas, como el arroz y la menta y vaya que me puso en mi lugar. Como he dicho, todo est\u00e1 en el detalle, en c\u00f3mo se usan estos ingredientes. Me gustaron tanto, que tambi\u00e9n prepararemos las alb\u00f3ndigas de Julio en casa. Aunque en M\u00e9xico usamos con mucha frecuencia los guaje (Roma en Estados Unidos), m\u00e1s que los jitomates bola, yo te recomiendo usar los que est\u00e9n m\u00e1s frescos y maduros, o d\u00e9jalos madurar un par de d\u00edas. Si quieres m\u00e1s picante, puedes a\u00f1adir un chipotle entero tambi\u00e9n. Recuerda, siempre es m\u00e1s f\u00e1cil a\u00f1adir picante poco a poco, seg\u00fan te guste, que tratar de corregir un platillo demasiado picoso. Lo diferente es que Julio es machaca un par de dientes de ajo con 5 o 6 hojas de menta fresca en un molcajete con tejolote. Si no los tienes, puedes picarlos. Tambi\u00e9n puedes usar pollo, res o la combinaci\u00f3n que te guste. Julio suele usar una mezcla de res y puerco, pero le sorprendi\u00f3 lo bien que quedaron con pavo. Su \u00faltimo truco, que no me convenc\u00eda mucho, fue a\u00f1adir arroz para unir la carne y darles m\u00e1s textura a las alb\u00f3ndigas. Resulta que todo depende de c\u00f3mo uses el arroz. Otras versiones que hab\u00eda probado le pon\u00edan el arroz crudo, pero Julio lo cuece de 6 a 8 minutos hasta que apenas est\u00e9 cocido, o al dente. Presiento que tambi\u00e9n te va a encantar lo que el ajo y la menta le hacen a la combinaci\u00f3n, de por s\u00ed espectacular, del jitomate y el chipotle.
