Ahora es mucho m\u00e1s f\u00e1cil encontrar lo necesario para preparar comida mexicana, y la gente no s\u00f3lo la come en restaurantes, sino que tambi\u00e9n la prepara en casa. Tenemos #tacotuesday y #taconight. A donde vayan en los Estados Unidos, pueden encontrar comida mexicana en aeropuertos, restaurantes, hoteles, comida r\u00e1pida, y la oferta sigue creciendo tanto en variedad como en calidad. Parece que la gente entre m\u00e1s conoce a la comida mexicana, m\u00e1s la quieren probar, cocinar y explorar todo su alcance.<\/p>\n<p>Me emociona much\u00edsimo ser parte de este momento, y disfruto en especial viajar por los Estados Unidos y aceptar las invitaciones para cocinar. Fue todo un honor recibir una invitaci\u00f3n para preparar la cena del Cinco de Mayo en <a href=\"https:\/\/www.jamesbeard.org\/events\/cinco-de-mayo-celebration?\" target=\"_blank\" rel=\"noopener noreferrer\">la Casa James Beard<\/a>, en la Ciudad de Nueva York, aunque tambi\u00e9n implic\u00f3 mucha presi\u00f3n; \u00bfqu\u00e9 tema les propongo? \u00bfqu\u00e9 men\u00fa, qu\u00e9 bebidas? Cuando hay tanto que compartirles\u2026<\/p>\n<p>Claro, el Cinco de Mayo casi no se celebra en M\u00e9xico. Es una ocasi\u00f3n un tanto sombr\u00eda que recuerda, sobretodo en el Estado de Puebla, la batalla del 5 de mayo de 1862 entre una peque\u00f1a milicia mexicana y el gran ej\u00e9rcito franc\u00e9s. Aunque esa batalla la ganaron los mexicanos, contra toda probabilidad, los franceses no tardaron en remontar. Afortunadamente, unos a\u00f1os despu\u00e9s, el pa\u00eds recuperar\u00eda su independencia.<\/p>\n<p>Por alguna oscura raz\u00f3n que nadie ha podido explicar con \u00e9xito, el Cinco de Mayo se ha convertido en la fiesta mexicana m\u00e1s grande fuera de M\u00e9xico. Me decid\u00ed por un men\u00fa que incluyera comidas de diferentes regiones de M\u00e9xico, en lugar de enfocarme en una sola regi\u00f3n. Tambi\u00e9n escog\u00ed algunos platillos favoritos de cuando era ni\u00f1a y un par de recetas nuevas. <a href=\"\/es\/recipe\/carnitas\/\">Carnitas<\/a> de Michoac\u00e1n, caldo de camar\u00f3n de Acapulco, gorditas de Oaxaca\u2026<\/p>\n<p>Despu\u00e9s de los cocteles, el primer platillo de la cena formal que servimos fue un aguachile de callo de hacha, inspirado en la regi\u00f3n del Mar de Cort\u00e9z.<\/p>\n<p>Fue un gozo trabajar con el equipo de la Casa James Beard. Comenzamos a preparar todo un d\u00eda antes, ya que era un men\u00fa bastante largo. No van a creer lo deliciosa que es, y lo f\u00e1cil que es prepararla. Este tipo de recetas nos ayudan a romper tantos mitos sobre la comida mexicana: no toda la comida mexicana es frita, ni dif\u00edcil de preparar, ni est\u00e1 cubierta de queso, ni es demasiado picosa ni tarda a\u00f1os en hacerse. De hecho, casi toda la comida mexicana es saludable, deliciosa y nutritiva.
