No entend\u00eda bien por qu\u00e9 la gente rostizaba pavos tan temprano en el a\u00f1o, ya que en M\u00e9xico es una tradici\u00f3n hornearlos hasta Navidad. Pero con los a\u00f1os, no s\u00f3lo la he entiendo, sino que ya la anticipo con gusto.<\/p>\n<p>Me encanta como todo se pone en pausa y la atenci\u00f3n se enfoca en la comida y en la cocina donde la preparan. Me encantan las emociones que provoca este d\u00eda festivo, y adoro la \u00e9poca del a\u00f1o en la que cae. Y claro, desde que Alan se fue a la universidad, me encanta que por unos d\u00edas nuestra familia est\u00e1 completa otra vez, comiendo la mayor parte del tiempo.<\/p>\n<p>En especial, valoro mucho que Thanksgiving es una oportunidad para celebrar las contribuciones que los inmigrantes han aportado a la cocina americana. Hoy, m\u00e1s que nunca, ese componente tiene un significado muy profundo para m\u00ed.<\/p>\n<p>Thanksgiving acoge recetas cl\u00e1sicas y tradiciones que se han pasado de generaci\u00f3n en generaci\u00f3n, pero tambi\u00e9n acepta nuevas y emocionantes adiciones que complementan a la perfecci\u00f3n lo tradicional.<\/p>\n<p>Eso precisamente fue lo que me inspir\u00f3 para crear un pay de Dulce de Leche Caramel Cinnamon con chocolate y nuez.<\/p>\n<p>La primera vez que prob\u00e9 un pay de nuez fue cuando me mud\u00e9 a los Estados Unidos. Hace unos diez a\u00f1os, mi querida amiga Debra nos dio a probar su pay de nuez con chocolate oscuro, que devoramos tan r\u00e1pido, que a partir de entonces trae dos pays cada a\u00f1o. El a\u00f1o pasado le coment\u00e9 que estaba tentada a preparar un pay a\u00fan m\u00e1s decadente agreg\u00e1ndole Dulce de Leche Caramel al relleno.<\/p>\n<p>Dulce de leche caramel, o cajeta mexicana, es un ingrediente indispensable en las cocinas del pa\u00eds. A nosotros, los mexicanos, nos encanta. Est\u00e1 hecha con leche de cabra en lugar de leche de vaca y como en algunos otros pa\u00edses, se prepara de manera tradicional \u2013 a fuego lento para que varias capas de sabor se fundan en un solo producto. La cajeta mexicana es tan rica y sustanciosa, que te la puedes comer a cucharadas, o encima de rebanadas de manzanas o pl\u00e1tanos.<\/p>\n<p><img class=\"aligncenter\" src=\"\/wp-content\/uploads\/2018\/10\/pati-jinich-coronado-dulce-de-leche.jpg\" alt=\"Pay de Coronado Dulce de Leche Caramel Cinnamon y chocolate con nuez \" width=\"912px\" \/><\/p>\n<p>En esta receta, el dulce de leche caramel ayuda a que el relleno sea m\u00e1s intenso, con un sabor a caramelo r\u00fastico inigualable. class=\"wprm-recipe-instructions-container wprm-recipe-8359-instructions-container wprm-block-text-normal\" data-recipe=\"8359\"><h3 class=\"wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Para preparar<\/h3><div class=\"wprm-recipe-instruction-group\"><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-8359-step-0-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para preparar la costra: pon la harina, la sal, el az\u00facar y la mantequilla en una procesadora. Pulsa un par de veces, hasta que la mezcla parezca una harina r\u00fastica. A\u00f1ade el agua y procesa algunas veces m\u00e1s. La masa debe quedar m\u00e1s h\u00fameda. Apaga la procesadora y forma una bola con la masa. Espolvorea harina en la superficie donde vas a trabajar, y amasa la mezcla 3 o 4 veces hasta que se mezcle bien. Forma un disco con la masa, envu\u00e9lvela en papel pl\u00e1stico y refrig\u00e9rala durante una hora, hasta que est\u00e9 firme.<\/div><\/li><li id=\"wprm-recipe-8359-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Para preparar el relleno: en un recipiente, bate los huevos con un globo para batir hasta que est\u00e9n espumosos. Agrega Dulce de Leche, la miel de ma\u00edz, el az\u00facar y la mantequilla derretida y sigue batiendo hasta mezclar todo. A\u00f1ade las nueces picadas y el chocolate y mezcla bien. <\/span><\/div><\/li><li id=\"wprm-recipe-8359-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para armar el pay: pon la rejilla a la mitad el horno y precali\u00e9ntalo a 190 C. Saca la masa del refrigerador. Enharina la superficie nuevamente, tus manos y un rodillo. Extiende la masa hasta hacer un c\u00edrculo de 28-30 cm. Pon la costra en un molde para pay, presionando en el fondo y los lados. Aprieta con los dedos las orillas del c\u00edrculo de masa en la parte de arriba del molde.<\/div><\/li><li id=\"wprm-recipe-8359-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Vierte el relleno en la costra del pay. C\u00fabrelo con papel aluminio dejando espacio encima. Hornea el pay durante 55 minutos, o hasta que cuaje y las orillas se hayan dorado ligeramente.
