Se hace con la hoja carnosa de una planta cact\u00e1cea llamada biznaga; es similar a la tuna y ambas crecen en climas \u00e1ridos pero la biznaga es m\u00e1s redonda. Para preparar el acitr\u00f3n, las hojas se pelan y se les quitan las espinas, a veces se remojan en lim\u00f3n, se secan al sol y al final se hierven en un jarabe hecho con az\u00facar y agua o miel, y se dejan secar al sol una vez m\u00e1s.<\/p>\n<p>En M\u00e9xico, se vende en tiendas y mercados. Tiene forma cuadrada o rectangular y se vende con otras frutas o verduras confitadas o escarchadas. De \u00e9stas, mi favorita es el camote confitado.<\/p>\n<p>El acitr\u00f3n, con un sabor dulce muy agradable y suave y consistencia chiclosa se mezcla con otros ingredientes mexicanos e ir\u00f3nicamente resalta esos sabores. Se usa en muchos platillos como los famosos chiles en nogada, el picadillo y otros rellenos de carne para chiles y tamales, salados o dulces, as\u00ed como en panes como la Rosca de Reyes o como dulce.<\/p>\n<p>Para los platillos que llevan acitr\u00f3n y no lo pueden conseguir, pueden usar pi\u00f1a confitada, de la que trae una capa muy delgada de az\u00facar.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>El acitr\u00f3n es uno de los pocos ingredientes de la cocina mexicana que todav\u00eda es dif\u00edcil encontrar fuera del pa\u00eds.
