If you\u2019re not \u2013 you still need to go. It\u2019s a true Mexico City breakfast experience. Lots of plate-licking involved.<\/p>\n<p>Fondas are small, simple and unpretentious restaurants serving real, delicious inexpensive Mexican food. You feel as if your grandma was cooking some of her best dishes for you. Well, only if your grandma was Mexican, and had the best <em>saz\u00f3n<\/em>.<\/p>\n<p>My grandpa was the first person to introduce me to this 50-year-old <em>fonda<\/em>. I\u2019m not super keen on waking up at 5:00 in the morning, yet will wake up without a problem just thinking that I\u2019ll soon be wrapping a fresh tortilla around all the different <em>guisados<\/em>. They open at 5:30AM and that\u2019s when everything is the freshest. This early in the morning you\u2019ll be bound to encounter people who sneak in a quick breakfast before work and crazy people like myself who simply have a strong craving. Closing time depends on how fast all the food they have prepared for the day is eaten, which is usually around 11:00AM.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-19705\" src=\"https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margartia-food.jpg\" alt=\"some of the dishes at Fonda Margarita\" width=\"640\" height=\"801\" srcset=\"https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margartia-food.jpg 800w, https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margartia-food-240x300.jpg 240w, https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margartia-food-768x961.jpg 768w, https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margartia-food-150x188.jpg 150w, https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margartia-food-600x751.jpg 600w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>Long communal tables, an open kitchen, large casseroles, stacks of crispy churros, fast moving waiters and a live guitarist make up the feel of this place. Alberto Castillo, one of the three siblings who inherited the <em>fonda<\/em> from his hard-working mother will always be at the front of the kitchen, welcoming people as they walk in and making sure everything\u2019s running smoothly.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-large wp-image-19704\" src=\"https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margarita-atmosphere-655x1024.jpg\" alt=\"fonda margarita\" width=\"640\" height=\"1001\" srcset=\"https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margarita-atmosphere-655x1024.jpg 655w, https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margarita-atmosphere-192x300.jpg 192w, https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margarita-atmosphere-150x235.jpg 150w, https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margarita-atmosphere-600x938.jpg 600w, https:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2018\/02\/fonda-margarita-atmosphere.jpg 726w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>Like most <em>fondas<\/em>, there\u2019s new and different menu items every day of the week. There\u2019s also the traditional dishes they\u2019ve been preparing for years. <em>Frijoles negros con huevo<\/em> (black beans scrambled with eggs), <em>chicharr\u00f3n en salsa verde<\/em> (crispy pork skins in tangy green salsa), <em>bistec en pasilla<\/em> (thin steak in pasilla chile salsa) are just a few of the classics. The communal seating allows you to take a peek at what everyone else is eating. The best way to make the most of the experience is to go with friends, order a variety and wrap everything you eat with a warm tortilla.
