Bacon Cheese Dogs with Avocado Relish

By now it is common knowledge that Mexico and Mexicans love to taco anything and everything. So much so that a few years ago, when the hashtag #TacoTuesday became a thing, I would laugh when people asked me if I was doing taco night on Tuesdays at home.

“We practically taco every night,” I’d respond. It is a fact: I always have a comal handy to warm corn tortillas just in case we get the urge to tuck anything into them. But what many people may not know is how much we love our hot dogs.

Ok, yes, hot dogs are originally yours, America. But we have found a way to make them our very own, too, and we’d love for you to add them to your repertoire, if you are so inclined.

Take it as a compliment. We love hot dogs so much that they have also become part of our street food. This isn’t something new. Not even from a decade ago. Hot dogs have existed in Mexico for at least a century. So right next to a taco stand, you are likely to run into a hot dog stand. I have told you the story of the Galán hot dog my sisters and I used to eat that drew me to tears last time we were filming in Mexico.

Yet, there are so many more ways to Mex up your hot dogs. At home, our latest favorite is one we call Bacon Cheese Dogs with Avocado Relish. It has a hot dog wrapped in bacon. It is then browned until super crisp. Then sliced in half, stuffed with queso Oaxaca, put back in the pan with all that flavorful bacon fat, cheese side down, until the cheese completely melts and the corners crisp up. That hot link sits on a layer of horseradish mayo in a toasted bun and is garnished with a quick avocado relish: diced tart tomatillos, soft buttery avocado, grassy cilantro and the irresistible bite of pickled jalapeños.

Ingredients

For the avocado relish:

  • 1 large (about 3 ounces) tomatillo husked, rinsed, cut into small dice
  • 4 scallions white and light green parts thinly sliced
  • 1/4 cup cilantro leaves and upper parts of stems chopped
  • 3 pickled whole jalapeños chopped, plus 2 sliced for garnish
  • 1 tablespoon brine from pickled jalapeños
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher or coarse sea salt or to taste
  • 1 ripe avocado halved, pitted, cut into small dice
  • 1/4 cup mayonnaise
  • 1 tablespoon prepared horseradish or more to taste

For the hot dogs:

  • 2 slices bacon
  • 2 hot dogs
  • 2 cups Oaxaca cheese shredded
  • 2 hot dog buns

To Prepare

To make the avocado relish:

  • In a medium bowl, add the tomatillo, scallions, cilantro, chopped pickled jalapeños, pickled jalapeño brine, lime juice, olive oil, and salt. Mix well. Incorporate the avocado and toss gently with a spoon to combine. Set aside.
  • In a small bowl, combine the mayonnaise with the prepared horseradish. Set aside.
  • On a cutting board, roll one slice of bacon around each sausage link. Place the tip of the hot dog over one end of the bacon slice, then roll the sausage around on the diagonal so that the bacon wraps around it and covers it entirely.

To make the hot dogs:

  • Heat a large skillet or griddle over medium heat. Add the bacon-wrapped hot dogs and cook, turning every couple minutes, until crisped and browned on all sides. Remove from the heat. When cool enough to handle, cut a slit lengthwise down the middle of each, without cutting completely through.
  • Raise heat to medium-high. Add two piles of about 1 cup shredded cheese onto the skillet and top each with a hotdog, slit-side down. Cook for 2 to 3 minutes until the cheese has completely melted and browned creating a cheese crust.
  • Meanwhile, open the buns but try not to separate the tops from the bottoms. Lightly toast the buns in the toaster or griddle. Spread a generous tablespoon of the horseradish mayonnaise onto each bun.
  • When bacon cheese hot links are ready, using a spatula, flip onto the bun, cheese side up. Top with a generous amount of the avocado relish, garnish with the pickled jalapeño slices and serve.

    I want to use your recipe to a T but am having a terrible time finding any stores in my area that carry FUD Hot links. I live in Connecticut but really am at a loss. Any similar product available that you know of? Normally i would drive to NY but just had my hip replaced and off the road for another two weeks. I can’t wait that long!!!!

    I’ve made them before but not using FUD. Needless to say they were fantastic, actually it turns into one night dinner and then make them again for lunch the next day. Sooooo Good.

    Hola, Pati! I made these hot dogs for Super Bowl Sunday at our house and everyone loved them. We’ll make them again for July 4th this year by popular demand.

    I’m trying to learn Spanish, with mixed results. A couple of years ago while vacationing in Mexico, I saw a tiny, miniature chihuahua puppy and exclaimed to the owner that it was a cute perrisito. She howled with laughter and I realized that I just called her dog a parasite! I guess I should have said perrito for tiny dog?!!!! We had a good laugh about it anyway.

    I made these dogs this past weekend after watching the video. It IS easier to put the cheese in the skillet. These were WONDERFUL!! Everybody loved them. I thought it was a little hard, because I tried to make 5 at one time. But I know if I make these enough times, they will be way easier. LOVED these!! And on another note…..who does the music for your tv show? It sounds like Grupo Fantasma from here in Austin. I can never see anything on the credits. LOVE YOUR SHOW!

    I would add sauerkraut to this Bacon Cheese Dogs with Avocado Pickle! My dad is a WWII US Navy veteran who also went to cooks school and was called, “Cookie” on the destroyer ships he was on. He learned to make many American dishes and when he came home, married and helped raise four kids, he’d BBQ us hot dogs on Saturday afternoons while my mama was at work. He introduced us to sauerkraut. I’m sure we were the rare kids on the block who ate and liked Sauerkraut on our dogs. So, on pati’s version I’d add a dollop of sauerkraut and I know that you;d love it too!

    I used this method to feed my family tonight and it was a big hit! I used a mix of mozzarella and monterey jack cheeses and it worked out well. Making sure my griddle had plenty of bacon grease left on it was crucial to releasing the “cheesy crust”. Our toppings were plain sliced veggies, tomato cucumber lettuce and avocado, instead of the salsa for kid friendliness. But I mixed fresh lime juice and green tabasco with mayonnaise to put on my own bun. Wow.

    Yes, my family and I love grilling especially Mexican style hotdogs and hamburgers! We not only grill during the summer but all year long. We also include our immediate family brothers, sisters, nieces & nephews so we’re about 40 people from my husband’s side and 20 on my side so of course grilled Mexican style hot dogs are a must! I will definitely be including your fabulous recipe on our next barbecue! By the way I love you show!!

    I love to cook, but due to work, kids and just a busy schedule my cooking has not been as often. My fault I know…

    But since I discovered your show in PBS!… man those cooking ideas are all coming back to me. I’ve been cooking your recipes and man they are good! I’ve began getting ideas from your show, and I’m just excited to get back in my kitchen!

    Even if I don’t win the grill, I just wanted to say “Gracias”. Gracias for getting me back to cooking. I like food! I like cooking it, and I specially like eating it, but when people think of cooking shows they think of hoity-toyty French or Italian dishes, but you show how Mexican dishes are just as good or even better! When I think of food I want to try to cook it’s not French, it’s not Italian, it’s Mexican! The warm bacon and cheese combined with the avocado relish and pickled jalapeños was phenomenal! I made 12 of these and there were no leftovers! I think this is one of my favorite recipes.     Hi Pati, I’m 71yrs old now but back in the 50’s and 60’s when I was growing up with our mom and dad and my two older brothers we would fry or boil the hot dogs then dunk them in my moms or dads hot salsa and warm them up in the pan. then put them in the hot dog buns and add cheese and onions on top. instead of chili beans.

    We’re having a birthday party Saturday. Daughter is 27, and we’re doing a lot of my Mexican favorites. We’ll be sure to make some of these scrumptious Bacon Cheese Dogs. With 60 people over these will be easy to make and definitely a crowd pleaser.

    I love watching Patti make Mexican dishes. Growing up in Anaheim, I had loads of Mexican friends, and doing homework at their house meant getting invited for dinner some times… Wow what a treat.

    Hmm??? A real “Mexican” hot dog? Growing up in Chicago, hot dos are so part of the city and we had them all the time. Man many years ago, my father invented the “taco dog” — it may not sound delicious, but you have to try it IT IS! Slice a cooked hot down the middle, fill it gently with salsa and wrap a warm tortilla around it. YUM!!!

    mmm… you had me at bacon

    Pati, for the past few years I have been spiral cutting my hot dogs and it makes them super yummy as then the condiments get right down into the sausage. There are recommendations that you skewer the hot dog with a stick and then cut around it but I just use a sharp knife on an angle and roll the hot dog down a cutting board scoring it around from top to bottom. Super easy and pretty quick and the difference is SOOO delicious.
