Ingredients

  • Vegetable oil for frying eggs
  • 8 eggs
  • To taste kosher or coarse sea salt
  • 3 cups refried beans
  • 8 slices of turkey or ham
  • 1 batch salsa ranchera
  • 2 cups (about 8 ounces) grated cheese such as Oaxaca, mozzarella or Monterrey Jack

To Prepare

  • Preheat oven to 400 degrees Fahrenheit.
  • In a medium skillet set over medium-low heat, heat a teaspoon of vegetable oil. Once hot, crack in 4 eggs, sprinkle with salt, and cover with a lid. Cook for about 3 minutes, until eggs are set, but not fully done, and the yolk is gooey. Repeat with the remaining 4 eggs, or make two skillets at once.
  • In an individual casserole, ovenproof bowl or large ramekin, spoon 3/4 cup refried beans, add a slice of turkey or ham, and a pair of the cooked eggs. Ladle in a generous amount of salsa ranchera to completely cover, and add shredded cheese on top. Assemble the rest of the casseroles. Alternatively, it can be made in a large casserole for everyone to share.
  • Place in the oven until the cheese has completely melted, about 4 to 5 minutes.

    I’ve made this recipe, with some variations, at least a dozen times now and I think I like it more each time. So simple, so good, and so easy. The salsa ranchera really makes it — I even got a comal, or cast iron griddle, for the last batch. With summer coming up and fresh, vine ripe tomatoes on the horizon, I’ll be making this more and more, and looking for your other salsa recipes. Mexican cuisine is so wonderful, so varied, and so flavorful, I just have to thank you for making it more accessible — and fun. Maybe you have a show on the uses of the many peppers?     There’s a first for everything! I tend to be very careful with Mexican dishes in restaurants. I have an allergy to Avocado. I made and served this dish for Easter brunch for the family and it was definitely a keeper. I will continue to explore at home dishes without Avocado. Your TV show is wonderful.     Pati! I just made this with leftover carnitas on the bottom with the beans and I added extra veggies and hot sauce in lieu of a good salsa on hand. It was all amazing! The carnitas was your recipe (WITH the sweetened condensed milk, it really matters!) and then I actually layed it all on a crispy tortilla. Gracias por esta receta!

    Patti your casserole is just the basics. I add three types of peppers, onions, ham, three cheeses, salsa that i have cooked open fire, and sausage with sage seasoning which I also make from scratch with my mothers old hand crank meat grinder. This is all done in an iron skillet then placed into the oven. Love your recipes and ideas for making each meal different and nutritious.

    Ahh, I wish I could buy seasons 1 and 2 on DVD recording or something like that.
    We tried this Baked Egg Casserole and enjoy it as a very satisfying comfort food breakfast. Even though some ingredients may be similar this one as a casserole really does seem like a little different meal from the Huevos Rancheros. Thank you for sharing and for all your hard work on the show.
    Oh, somewhere you said during a show that you find it happy and satisfying when you are using all 10 burners on your stove. I do feel almost exactly the same way about cooking except that because problems in my family came up I have not graduated up to the 10-burner stove yet.

    Hi Pati, I watch and enjoy your show regularly. I saw the episode with this recipe and found it in your cookbook which I have. I had to try it. I used refried pinto beans that I had prepared for a Tex-Mex lunch earlier in the week. So, Sunday morning I prepared the Rustic Ranchero Salsa, shredded the cheese, heated the refried beans, lightly fried the ham, lightly cooked eggs sunny side up, and then assembled the dishes. I used my Mexican style oven proof plates. I deviated from the recipe by first placing crisp corn tostadas on the plates, then layering beans, ham, eggs, salsa and cheese. Into the oven for about four minutes until the cheese was melted. The result? Fantastic! My wife and I both loved it. I thought it was one of the best recipes I have tried. Thank you so much.

    I love the recipes for refried beans and salsa ranchera linked in this recipe. They were both flavorful, delicious, and fun to make! Unfortunately I had issues getting the entire thing to heat through. I think my first issue is that I misinterpreted the egg cooking instructions and fried my eggs so that the whites were mostly set but not completely, assuming they would finish cooking in the oven. I assembled the casserole in a shallow dutch oven, which may have been the wrong choice. The beans and salsa had both been in the fridge overnight, as I made them ahead, so they were cold going into the dish. I factored this in and added 5 minutes onto the cook time from the beginning. When I took it out to serve, the beans were not as warm as I’d like and I discovered (while eating) that the egg whites were still raw. My fault, but I just want to warn anyone who may have interpreted the instructions as I did. Cook your eggs as much as you would as if you were going to eat them straight out of the frying pan and sunny side up! Get the whites COMPLETELY set. The yolks will stay runny while baking. If you make the beans ahead of time, consider heating them up separately before adding to the casserole.

    I’ve made this family style in a large casserole several times since I first saw it on your show. It is just wonderful. I like it without making any changes, but I’ve also modified it to use scrambled eggs (my family doesn’t particularly like fried) and I’ve substituted chorizo for the ham, just for fun.     Pati, thanks so much for this recipe. Mine didn’t turn out as beautiful as yours 🙁 I made it in a 9×9 casserole dish w/6 eggs. I used canned black beans that I mashed up a bit, but it came out watery. My man ate half his serving, then put the other half in a flour tortilla and ate it like a breakfast burrito, lol. The presentation was pretty ugly, but it got a 7 out of 10 over all. I will try again soon. Thanks again Pati. Love your show and love to see your visits to Mexico!!!

    Pati, this was wonderful. We made this for dinner instead of breakfast since we like eggs sometimes for dinner and this was perfect! Only change I made was to sub four toasted corn tortillas for the meat. (I did half the recipe for two of us). It was so good and we will do this again many times.     Just to clarify, I did add beans to the bottom, and ham, fried eggs… But not MY beans and MY ham. Commonly, I cook Boston Baked Black Eyed Peas and Bacon, and in the Summer, BBQ my hams. Damn good, and a Boca Breakfast like that would really Pop! Tentatively.

    I saw the episode on Saturday and decided “We’re going to have a Boca Breakfast Casserole tomorrow!
    So I made a big one with 7 eggs in it, lots of Ham and salsa and cheese.
    It’s was pretty darn good, though I didn’t have my beans or my ham.

    Does it turn out better in the individual containers? Mine are ramekins.

    This has been a good season! Wonderful job to you and the crew.
