Pickled Poblano Rajas Tuna Melt

Ingredients

  • 2 7-ounce cans of tuna in water or oil drained
  • 2 tablespoons mayonnaise
  • 2 tablespoons freshly squeezed lime juice
  • To taste kosher or coarse sea salt
  • 8 slices rye bread lightly toasted
  • 2 Pickled Poblanos stems removed and sliced into strips
  • 4 thick slices muenster cheese or 8 thin slices

To Prepare

  • In a mixing bowl, mash the tuna with a fork until well shredded. Combine it with the mayo, lime juice and salt to taste.
  • Pre-heat the broiler, or you can use toaster oven.
  • Divide the tuna mixture between four slices of bread. Divide the poblano strips on top of the tuna, and top with the cheese. Place under broiler, or in the toaster oven, until the cheese is melted.
  • Place the remaining slices of toasted bread on top to close the sandwiches and serve.

    This was a delicious lunch. I modifies with ingredients I had on hand. I griddled sourdough with fennel and caraway seeds. I used roasted Hatch chilis because they are in season and I had them. And I didn’t have Manchego so I used Monterrey pepper Jack instead. I think I was like Pati. I was surprised it was sooooo good! I will be making again! Thank you Pati! 🤗

    I made this with what I had. I used roasted hatch chiles and Monterrey pepper Jack cheese. It was absolutely delicious and now on my “go to” sandwich list! Thanks Pati!

    I will try this recipe, but are the pablano’s spicy? I don’t eat lots of spicy food. If I do it has to be a very mild spice

      Poblanos are usually very mild: http://patijinich.com/pati_2020/poblano_peppers/ If you happen to get a spicy one and you want them to be fairly mild, once you roast and cut them, let them soak in warm water mixed with a tablespoon of brown sugar for 10 to 30 minutes, then drain.

    Hola Pati! Anne Hoffman here. Would you ever try this with chicken?

    I was thinking grilled chicken, rajas on top, and cheese on top of that. Not a tuna fan, and I don’t know that this would work with chicken salad. Que opinas?

    I made this tonite – it was EXCELLENT!! So much fun grilling the poblanos. I had to put in 4 TB mayo into the tuna, 2 TB just wasn’t holding it together. We are having it again tomorrow. Thanks for an awesome recipe!
