Ham and Cheese Sincronizadas with Flour Tortillas

Ingredients

  • 12 flour tortillas
  • Safflower or corn oil optional
  • 8 ounces Chihuahua, Oaxaca, Monterey Jack, Muenster or melty cheese of your choice
  • 6 to 12 thin slices ham or turkey
  • Mexican avocado slices optional
  • Salsa of your choice

To Prepare

  • Heat a non-stick sauté pan or a comal over medium heat. Place a couple flour tortillas, many as will fit in the pan or comal, top with a generous amount of shredded cheese and one or two slices of ham or turkey. Cover with a second flour tortilla.
  • Heat until the flour tortillas in the bottom become lightly toasted and cheese starts melting. With the help of a spatula, flip them to the other side and let it heat and crisp a bit. I like to wait until the cheese oozes out, browns and crisps a little! Transfer to a plate and slice in half or quarters.
  • Serve with a salsa of your choice and slices of ripe avocado on the side.

    Sorry I missed that GMA appearance. I love quesadillas and I’ve kind of mastered them thanks to how much Patty Jinich I’ve watched on TV. I like to heat the meat with the cheese on top with onion strips and place it hot on the tortilla to flip after. My wife likes to make your chicken broth & my dog likes to chomp the bones. Thanks for all you do! Now, necessito comer.

    Spinach and cheese is a good filling also. I like to make a simple dipping sauce of thickened chicken broth mixed with sour cream. My kids loved these when growing up!

    I know this is off track .But for years I been trying to find a recipe for shrimp enchiladas. I had some once in Calif ,it had the creamiest sauce in the enchilada. Thank you for your time.

      Hola Paula, from my perspective, in this case sincronizadas go with flour tortillas and are not folded, just one on top of the other. Some people call sincronizadas quesadillas, and it is fine as well 😉

    Hi Pati, Love your site. Could you please clarify the instructions on the Ham and Cheese Sincronizadas? Initially it says to; “…Place a couple flour tortillas, many as will fit in the pan or comal”, add the other ingredients, then top with one tortilla. Should it actually say, place ONE tortilla in the pan, then the ingredients, then top with one tortilla ? Thanks, Pete

      So glad you are enjoying the recipes here on the website Pete, yay! Well, I guess it will depend on how many sincronizadas you want to make at once; I suggest you make at least two per round, one will not be enough because they are delicious 😉

    Your website is taking forever to see a recipe – I was able to download the Episode, but then when I click on the photo or title of the recipe I want to see, nothing happens. I am having to reload the URL-website address about 5-times before it finally appears. Prior to finanlly working, your systems is telling me that you have malfunctions. Please get this corrected immediately for all your loyal Patrons. I do enjoy your show with the kids, family and friends, as well as the tours through many cities you vsit in Mexico.
