Charred Red Onion Salsa

2 cups
Salsa de Cebollas Encurtidas


  • 2 red onions, unpeeled
  • 3 limes, juiced (about 1/4 cup)
  • 2 to 3 tablespoons cilantro, chopped
  • Kosher or coarse sea salt to taste

To Prepare

  • Preheat grill to high.
  • Char onions until skins are blackened and they soften. When cool enough to handle, peel and cut into 1-inch pieces. Place in a bowl and stir to combine with lime juice, cilantro and salt to taste.
