Charred Red Onion Salsa

- 2 red onions unpeeled
- 3 limes juiced (about 1/4 cup)
- 2 to 3 tablespoons cilantro chopped
- Kosher or coarse sea salt to taste
- Preheat grill to high.
- Char onions until skins are blackened and they soften. When cool enough to handle, peel and cut into 1-inch pieces. Place in a bowl and stir to combine with lime juice, cilantro and salt to taste.
