Not many people know about Durango’s history, culture or gastronomy. This session will open a door into many of its wonders. From the exquisite semitas and caldillo with shredded, salted, and dried beef that MCI director Alberto Fierro remembers from his grandmother, to a truly unique scallion and cheesy tomato stew, this class will shine a light on the richness and diversity of México’s north.

Baja Road Trip

Having just come back from filming the last season of Pati’s Mexican Table in the two states that make the Baja Peninsula, Baja Norte and Baja Sur, chef Jinich will guide us through the most memorable dishes that she tasted in the region. From a César Chávez tostada, to the Ensenada fish taco and a chorizo and plantain stuffed roast with an arugula salad with a walnut and date vinaigrette, the food from the Bajas breaks every culinary mold.

Michoacán helped México and Mexican traditional cuisine earn the UNESCO designation in the list of intangible cultural heritage. Once you visit Michoacán and taste its food, you realize why, in an instant. Michoacán has not one, but many regional cuisines and this session focuses on that of the Purépechas. Come and taste the truly unique dishes such as corundas, churipu, atapakua de calabacita and atole de leche: you will taste the Purépecha magic.
