Mango, Tomato, Tomatillo, Basil and Jalapeño Salad

Ingredients
For the vinaigrette:
- 2 tablespoons unseasoned rice vinegar
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons olive oil
- 2 tablespoons vegetable oil
- 1 teaspoon kosher or coarse sea salt or to taste
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup slivered red onion
- 1 to 2 jalapeños halved and thinly sliced
For assembling the salad:
- 2 large mangoes peeled and sliced (about 4 cups)
- 1 large tomato cut into segment slices
- 3 tomatillos husked, rinsed, cut into thin segment slices
- 15 basil leaves thinly sliced
To Prepare
To make the vinaigrette:
- In a mixing bowl, whisk the rice vinegar, lime juice, olive oil, vegetable oil, salt and pepper. Add the red onion and jalapeños, mix, and let sit and macerate for at least 5 minutes.
To assemble the salad:
- Assemble the mangoes, tomatoes, tomatillos, and basil on a platter. Dress with the vinaigrette and macerated onions and jalapeños. Serve.

This is a beautiful, delicious salad that is perfect for this steamy DC weather, especially now that ripe tomatoes are available. Sometimes I add a little avocado or bits of salty cheese. This is the first time I’ve made for this season, but I made it for several parties last summer, and it’s a hit every time! Thank you, and stay cool.

Wonderful salad! Everyone loved this salad. I omitted the jalapeño because the kids don’t eat anything with any spice. The combination of ripe mango, tomatillo and tomatoes with just a hint of red onion was perfect! Everyone asked me to make it again.

I absolutely love this salad and have adapted it to other fruits such as pineapple and strawberries and have ramped up the heat by going to hotter peppers. It is even better the next day. That is if we can manage to have leftovers.

Hi Ron, I saw this salad yesterday on Pati’s show and plan to try it soon!! Then when I looked at the comments I saw that your name was KAYL0R. That is an old family name of mine and one you don’t see often. My Kaylors came from West Virginia and moved to California late 1800s via train. I will be thinking of you when I eat this salad. Bet my old Kaylors would have thought it weird and too spicy!

Today was the first time I saw your show. Even though I’m on a special fasting diet now (no meat, no dairy), I watched the show because we love Mexican food at our house. I was thrilled to see this Veggie and Fruit salad that I CAN have during my fast. I have ordered the ingredients for my grocery delivery tomorrow and I can’t wait to make this for dinner. I’m new at cooking and saw your show with this mango salad. My mouth was watering imagining the taste of the combination of lime juice, mango, jalapeño and other ingredients! I told myself “you can do this”! I follow your recipe and it was better than I expected! My wife was surprised about “my skills” and now expects new surprises from me!
The salad by itself was amazing and our main dish was flank steak tacos. I decided to add some of the salad to one of the tacos, instead of all the other ingredients (oregano, salsa, lettuce, tomato, cream) and WOW! The flavor of the tacos was now out of this world! Juicy, spicy, sweet, sour, etc!
I am glad I found your show and now getting familiar with your other recipes. I can’t wait to try a few of them.

I saw your show and was really intrigued by the salad. I remember saying to myself I can do this! So I did. Unfortunately I was unable to find tomatillos anywhere in Ontario or Quebec (Canada). I did however find some tomatillos salsa which I substituted for the lack of tomatillos. I did find some tomatillos plants which I bought and hope to try for real in July, when they are ripe. I tried very hard to be true to your recipe except for that part. Nonetheless it turned out very well. I like spicey a lot, but I think I will reduce the next salad I make with maybe only 1 1/2 jalapeños instead of 2. All this to say you have me as a fan from here on in.
I may even be bold enough to try some of your other recipes in the near future.Lol!

This looks so interesting but is there something that is less spicy than the jalapeno? I have very wimpy family but would still love to make this….any suggestions for a chili or pepper with less heat?

Hey Kelly, thanks for your question. In fact, jalapenos are some of the milder chilies out there. To make sure they do not have any heat but still keep all their flavor, remove all seeds and veins and just stay with the flesh. I promise you this salad is not spicy at all 🙂
