Ingredients

  • 2 pounds sugar
  • 8 cups warm water
  • 2 pounds basmati white rice
  • 6 ounces slivered almonds (about 3/4 cup)
  • 1 canela or true cinnamon stick
  • 1 cup cacao nibs

To Prepare

  • In a large container, add the sugar and hot water and stir for a minute. Add the rice, slivered almonds and cinnamon stick, and let the mixture sit for at least 4 hours and up to 24 hours.
  • Stir the mixture well before pureeing. In batches, puree until completely smooth in a blender, strain into a large bowl. When done, pour into pitchers, add cacao nibs, and leave in the refrigerator until ready to serve. Serve in glasses with ice cubes.

    I’m so glad I’ve found your tv program and website. Grand father used to make us horchata and now I have the know how thanks to you

    I’m a certified food and cocktail.server/ family of 5 hairdressers so working under master chefs I ate very comfortably. My moto is I’m the waitress in white gloves, who’s the cook? Now It my turn to cook.

    I’m so glad to tune in to the show and watch your cooking experiences. I’m sorry I’m unable to taste your expert cooking. It all looks marvelous.

    is the rice cooked? before adding the hot water?

      No, it is raw rice 😉

    do you rinse the rice before you soak it over hot water?? wish rice is better regular or long grain.

      Hey Angie, I do not rinse the rice and I like to use long grain to make my Horchata 🙂
