Sweet Orange Pinole

Ingredients
- 1/2 pound (or 1 cup) popcorn kernels yellow, blue, pink, or white
- 2 ounces (¼ cup) packed grated piloncillo or dark brown sugar
- 1 2-inch piece of canela or true cinnamon stick broken into pieces
- Rind of half of an orange
To Prepare
- Preheat a heavy casserole over medium heat for a few minutes. Add the popcorn kernels and start to heat, stirring frequently. Once the kernels start to pop, reduce heat to medium-low and cover. Let the corn continue to pop, shaking the casserole a few times as it does, until you hear the sound of popping practically stop. Remove the popcorn from the heat and uncover. Transfer to a large bowl or baking sheet and let cool.
- In batches, process the popcorn along with the piloncillo, cinnamon, and orange rind in a blender or food processor until finely ground. Store in an airtight container.

Sorry, I don’t understand the popcorn kernel measurement in the Sweet Orange Pinole recipe. Would you please explain “1/2 pound 1 cup?”

Use it as a base of a cheesecake instead of crumbled cookies or to make a sweet drink by dissolving it in cold water and add tons of ice! There are also many recipes for pinole cookies 🙂

Pati, our family member has a gluten allergy and I am so excited to try pinole for crusts desserts and other recipes!
My stove is a glass induction stove; tje only stove I have access to. “Shaking the [heavy] casserole a few times” will damage (and maybe break) my glass induction stovetop.
What other heating options and instructions are there to make the pinole kernels ‘pop’? We also have an electric oven and microwave.

You really just need to make popcorn, so you can do it the way you normally do, or you can first lift your casserole, then shake it and then put it back on the stove 🙂
