Ingredients

  • 1 finely chopped shallot
  • 1 tablespoon coarsely chopped capers
  • ¼ cup coarsely chopped fresh cilantro
  • ¼ cup chopped pickled jalapeños
  • 2 tablespoons brine from pickled jalapeños
  • cup freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher or coarse sea salt
  • ¼ teaspoon freshly ground black pepper
  • 3 ripe avocados halved, pitted and diced
  • 5 ounces panela cheese diced

To Prepare

  • In a large bowl, place the shallot, capers, cilantro and pickled jalapeños and cover with the pickled jalapeño brine, lime juice, olive oil, salt and pepper. Whisk until well incorporated. Add diced avocados and panela cheese and toss to coat. You can refrigerate up to 24 hours until ready to eat.

    After randomly turning on the TV your episode for this recipe was on. We were having Carne asada tacos for dinner and since I had most of these ingredients (I used queso fresco instead of panela) it was a tasty change up to guacamole, so refreshing, delicious, and tangy! It was such a great compliment to the steak.Thank you Pati for the idea! Dios te bendiga.

    Easy, nutritional spring & summer salad. Very healthy. Do more of these lower fat, lower calorie dishes. Love the recipe that is different from how I use avocados. Make guacamole one in a while. Use avocados all the time.

    Pati. I love your show. Your personality. But I’d not eat but 3% of what you cook. I don’t like hot…peppers…onions. I grew up in the ghetto of NY. Not that your food is bad. I’m not used to eating like that. Love your boys on the show. Juju loves to cook with mom. So cool
