Meat, Pinto Bean and Bacon Stew

Carne en su Jugo

Ingredients

  • 1 pound tomatillos husked and rinsed
  • 1 to 2 fresh serrano chiles stemmed
  • 1 cup cilantro leaves and upper part of stems
  • 1 teaspoon kosher salt or to taste
  • 1 pound thick bacon slices chopped
  • 2 pounds sirloin steak thinly sliced and cut into small bite size pieces
  • 1 cup finely chopped onion
  • 2 to 3 cups chicken or beef broth
  • 5 to 6 cups Frijoles de Olla or beans from the pot (cooked pinto beans)

To serve:

  • Finely chopped white onion
  • Finely chopped cilantro
  • Quartered limes
  • Warm corn tortillas optional
  • Fresh chunky guacamole optional

To Prepare

  • Place tomatillos and serrano chiles in a medium saucepan. Cover with water and bring to a boil over medium-high heat, then reduce heat to medium and cook for 8 to 10 minutes until completely cooked through and soft. Using a slotted spoon, transfer the tomatillos and chiles to the jar of a blender along with the cilantro and a teaspoon of salt. Puree until completely smooth and set aside.
  • In a large casserole or Dutch oven, fry the chopped bacon over medium heat until crisp. Transfer to a bowl with a slotted spoon and set aside. Reduce heat to medium, add the streak to bacon fat and cook until it starts to render all its juices. Once it does, add the onion and the broth. Continue cooking for about 15 minutes.
  • Incorporate the tomatillo puree and continue cooking for another 15 minutes, until meat is completely tender and broth has seasoned.
  • Serve the carne en su jugo in bowls along with a ladle of cooked pinto beans, and top with the crisp bacon. Place chopped white onion, cilantro, and lime wedges on the table for everyone to add as they please. You can serve with warm corn tortillas and a side of fresh guacamole.

    Isn’t this just chili con carne without the chili?

    Anyway, I’ve been watching the show for years and years, but usually get inspiration for my own thing. This is the first full on Pati recipe I have tried [I had to wait until my wife was traveling or she would have been jealous]. This recipe is so much more than the sum of it’s parts. I forgot to get cilantro [which was regrettable] while I was at the store and I only had 3 slices of bacon [which seemed like the right amount in the end], but the dish is still awesome… especially for how simple it is.

    you’re an inspiration Pati! I just love how you tie your roots back into your own kitchen. And I am a big believer in making my own beans – they really are so so easy – red, white, pinto, black – even chickpeas to make homemade hummus. I am definitely going to cook this soup/chili but I am thinking of using pork in place of beef – or perhaps a combination of both.
    btw – can you remind me the name of the train ride you took in Mexico – the one with the kitchen and chef on board. I am going to plan a trip to Mexico and want to include this wonderful ride – and any other suggestions on cities and/or towns to visit would be welcome

I just got it so I’m all set to try this. I told the Hatch chile people that I intended to make this recipe with their chiles and that the Jalisco stew was just taught to me by you. They should already know about you, but you never know.

    Pati! I saw this soup on one of your demos on Facebook and had to try it. I made it the next day and oh it was truly one of the best soups I have ever made or tasted and so easy to make such a flavorful meal. I recently doubled the recipe and made it for a church gathering…. I took home an empty pot. It was loved and enjoyed with people grabbing seconds and thirds by even some. I am Gluten Free so this recipe needed no alternating. Thank you for sharing your precious recipes! What a treasure, I now have two of your cookbooks. My husband and I used to go to Ensenada Mexico frequently and we felt like it was our home away from home. I love learning how to make the food! I cannot wait to make more recipes from your book.

    I had to make this recipe after seeing Patti’s demo and she is correct! It is so rich with flavor!! It is so flavorful and doesn’t really take long to prepare. I make my own guacamole as well as my own chicken bone broth and loved how easy it was to make. This is now our favorite and I am making it for a church group to share! My husband and I have spent a lot of time in Mexico and this recipe I will truly treasure.

    I was excited to see you make this stew. I have been making this for my family for years. I like to make potato and chorizo taquitos or rolled tacos to dip into the soup or stew. So yummy. I really love your cooking and watching your show. This recipe is good to cook in the wintertime it’s like a warm hug.

    My husbands one of those who dislikes cilantro. I heard you an use parsley in place of but not sure the taste would translate. Is there another option? Love your recipes and show.

    Ever since I viewed it on PBS I wanted to try this recipe. I had apprehension of using tomatillos in a soup but decided to follow the recipe just the way Patty has given.
    This is a delicious soup especially on a cold fall day. To reduce the tartness I added a pinch of sugar.
    I severed the soup with plain rice and it turned out to be a hit with the family.

    I watched an episode of Patti’s Mexican table last week where she made this recipe, inspired, I decided to make it this past Sunday afternoon along with the Frijoles de Olla from scratch, this will definitely become a new favorite comfort food.
