Guacamole Salsa

Ingredients
- 1 pound tomatillos husked and rinsed
- 1 garlic clove peeled
- 1 jalapeño chile
- 1 serrano chile
- 2 tablespoons coarsely chopped onion
- 1 cup coarsely chopped fresh cilantro leaves and upper stems
- 1 large avocado halved pitted, meat scooped out, and chopped
- 1 teaspoon kosher salt or more to taste
To Prepare
- Place the tomatillos, garlic clove, and chiles in a medium saucepan, cover with water, and bring to a boil over medium-high heat. Reduce the heat to medium and simmer for 10 to 12 minutes, until the tomatillos are mushy and very soft but have not begun to break apart.
- With a slotted spoon, transfer the tomatillos, chiles, and garlic to a blender. Add the onion, cilantro, avocado, and salt and puree until smooth.
- Serve at once, or transfer to a container, placing a sheet of plastic wrap directly against the surface before topping with the lid to keep the nice green color. The salsa can be refrigerated for a couple of days. Stir before you use it.

Hola Pati. I’ve known & watched on tv for the longest it seems. I love all your recipes. I especially enjoy when you bring your good looking boys in the picture. I did not think I could find a guacamole salsa recipe & I don’t know why I’m thinking that way. But, I want to thank you sooooo much for the guacamole salsa recipe!

I have made a similar but uncooked Guacamole Salsa – this one tops that – hands down. Another fabulous recipe Pati. Love your cooking style, your sharing style and never get tired of watching your tv shows and recommending them to a lot of people. Please don’t stop doing what you do so well!

This is delicioso, the second time I made it I roasted the tomatillos and chili’s instead of boil them, and used a little more avocado… EVEN BETTER. I love your sight, and your new book.

Neighbor brought me several beautiful avocados from her home in Puerto Rico and threw in a big bunch of cilantro. Watched today’s show about Puerto Vallarta and the shrimp tacos. And this absolutely gorgeous guacamole salsa recipe. Getting ready to get out the tomatillos and do it!
