BLT with Chipotle Goat Cheese Spread

Ingredients
- 1 cup Chipotle Goat Cheese Spread
- 8 slices white bread lightly toasted
- 12 thick slices of bacon cooked until crispy
- 1 head Bibb lettuce rinsed and drained
- 1 ripe beefsteak tomato cut into slices
- 8 eggs cooked sunny side up
To Prepare
- Spread the Chipotle Goat Cheese Spread onto one side of 8 slices of toast. On four of the pieces of toast, add 3 slices of bacon, two leaves of Bibb lettuce, a thick tomato slice, and 2 sunny side up eggs. Top each sandwich with the remaining toasts.

Made this sandwich and followed recipe exactly. It was an easy meal and I loved it! Especially the goat cheese spread. I don’t know if it was the chipotle and adobo or sundried tomato that eliminated the sometimes gamey flavor of the goat cheese. Would probably convert many who are put off by that flavor.
