Print Recipe
Pay de Queso con Dulce De Leche
Ingredients
  • For the crust:
  • 1 1/2 cups finely ground Maria cookies vanilla wafers or graham crackers
  • 6 tablespoons unsalted butter melted, plus more for greasing the pan
  • For the cream cheese filling:
  • 1 pound cream cheese at room temperature
  • 1 14-ounce can sweetened condensed milk
  • 3 large eggs at room temperature
  • For the dulce de leche topping:
  • 1 1/2 cups sour cream
  • 1 14-ounce can dulce de leche or cajeta
  • 1 cup chopped pecans
To Prepare
  • Butter a 9- to 10-inch springform pan and set aside.
  • To make the crust: In a large bowl combine the ground cookies and melted butter until thoroughly mixed. Turn the cookie mixture into the springform pan. With your fingers, pat it evenly around the bottom of the pan, gently pushing it up the sides to make a crust 1/2- to 1-inch tall. Refrigerate while you make the cream cheese filling and dulce de leche topping.
  • To make cream cheese filling: Place the cream cheese in the bowl of an electric mixer and beat at medium speed until smooth and light, 3 to 4 minutes. Add the sweetened condensed milk and continue beating until well mixed, scraping down the bowl as needed. Add the eggs one at a time, again scraping down the bowl as needed, and continue beating until the mixture is well blended and smooth, set aside.
  • To make the dulce de leche topping: In a medium bowl, mix the sour cream with the dulce de leche until combined.
  • Adjust the oven rack to the lower third of the oven and preheat to 350°F.
  • Remove the springform pan from the refrigerator. Gently spread the cream cheese filling evenly, trying not to distress the crust. Place the cheesecake in the oven and bake for 35 minutes, or until it is set and the top is lightly browned. Remove from the oven and let cool for at least 10 minutes before you add the dulce de leche topping.
  • Spoon the dulce de leche topping over the cream cheese filling, add the pecans all around the edge and place the pan back in the oven for 10 more minutes. Remove from the oven and let the cheesecake cool to room temperature. Cover and refrigerate for at least 4 hours before serving. It tastes even better if it chills overnight.
  • Before serving, run the tip of a wet knife around the edge of the pan to release the cheesecake. Remove the ring, then slice and serve the cake.

  1. Oh My Goodness!!! Best birthday cake ever!!! The original recpe was great but the tweaked recipe was even better. Pati, if you like cinnamon and caramel together you have to try adding 1 teaspoonful of cinnamon to the cheesecake batter. Using the chocolate marias didn’t make a big difference to me, but then I’m into caramel not chocolate, lol. Thank you for this recipe!

  2. I have this in the oven right now! Can’t wait to see how it turns out. I did take a few liberties with the recipe though. When I went to buy the Marias, they were out of the regular ones but they had chocolate ones. It seemed like a natural so I got them. Also, I love love love cinnamon with any kind of caramel, dulce de leche, or cajeta. So I added a teaspoonful to the cheesecake batter. I tasted the batter before I poured it into the crust and it was awesome! I’ll let you know how it comes out with thdulce de leche topping.

  3. Es la Segunda vez que lo ago y me queda riquisimo😁 saludos a chuchu el iso que se me antojora. Muy buenas tus recetas Paty.😗😗😗😗😗💖💖💖

  4. Made this cheesecake for friends for Cinco de Mayo. They work hard for very little respect and were so happy to have your wonderful cake. Hopefully it made their day a little nicer.

  5. Made this today while watching your show. Paused it while I went to the store for sour cream. Everything else was in my fridge or pantry!! Can’t wait to see how my familia responds!

  6. Patti: Baked your Tequileras a few days ago. Good but will have to redo them as they apparently didn’t bake long enough. Such a shame having to make another batch. Am going to do your Dulce de Leche Cheesecake for some friends for Cinco de Mayo. And there is another friend who is having an upcoming taco bar, so another chance to get it right. Busy, busy. Thanks for the great recipes.

  7. Love, love, love!! Did I mention love? 🙂 This was my first cheesecake EVER! I brought it to work and now everyone thinks I’m quite the chef – LOL! Little do they know I’m not even close – but when I saw your show making the cheesecake, you make everything look so fun and easy that I just had to try it! And now I have co-workers requesting that I make the cheesecake for their birthdays!! Thank you Pati for your show, your recipes, and love of what you do and for sharing that with us!! 🙂

  8. I plan to make this some time soon. I love in New Hampshire so I am not sure I can find Dulce Dr Leche at the grocery store. Is there a substitute I could use instead?
Thank you Pati, I really enjoy the show.

  9. I have made this recipe three times. The first time I only used condensed milk instead of dulce de leche. I got confused for some reason I thought they were the same. Next two times I got it right and was delicious. But instead of pecans I used strawberries. Thank you, you are great at what you do.

  10. I have made this cheesecake twice and it is a HIT every time. I think it is one of the most delicious cheesecakes I have ever eaten. 5 stars

  11. I love cheesecake and your show!!! This receipe was shown this during one of today’s episodes and I can’t wait to make it but I have a question though…what would be a good substitute for the pecans, nuts etc. How about maybe chocolate chips or toffee chips…what do you think? Any ideas would be most welcomed!

    1. I’ve had luck leaving out the nuts and putting fresh berries on top before… but chocolate chips do sound interesting… let me know how it turns out!

  12. Just want to say this is a great simple recipe and has already become a family favorite. We’ve even improvised and made them in cupcake trays so that they’re easily shared at a potluck. It comes out just as good!

  13. This was the first time that I have ever made cheesecake. Actually I made all of the recipes in this show. Pati, I absolutely love what you do and how you do what you do. Everything was easy and affordable. I felt so proud of myself. Thank you

  14. Hi, I was so excited to try this recipe but was a bit nervous about it not ever making cheesecake. I searched for a video of the show and was unable to find it. I like to see the episode right before I try it out. I had a bit of trouble but the final result was fantastic! Mine did not come out like the picture even though I followed every step. Not sure what happened but it tasted very good.

  15. Pati, I saw your Dulce de Leche cheesecake show. Looked awesome. Anything made with Cajeta has to be great! I have made this recipe twice and there never much in leftovers after my grandsons get done with it. my daughter and I and gluten intolerant so I did substitute GF crackers in the crust. Can’t wait to make this again.

  16. I am making the cheesecake as soon as i can. It looks so yummy. I was looking for an easy cheesecake to make, and i found it. Thank you Pati.

  17. Hi Pati
Made your wonderful Dulce de Leche Cheesecake. It was my very first time making a homemade cheesecake. I found it very easy to make and bake. Simple and straight forward. The flavors absolutely work!! It came out perfect! The cheesecake was the hit of the party. Everybody now wants the recipe so I am referring them to this site! Thank you for sharing this wonderful recipe!
    My best, Lily

    1. Hi Lily, Thank you for making the cake for your friends! Glad to hear they enjoyed it & thanks for sending them to my site!!

  18. Hello Patti
Saw your show today and my mouth was watery when I saw JuJu eating the dulce de leche cheesecake lol
Will try to make it for Father’s Day. It just looks so delicious!!
Thank you so much for your show.
    Viva Mexico!!!!!
    Albeza

  19. My husband and I watch your show on Sunday nights after all the kids go to bed. Sunday night my husband requested we try EVERY SINGLE RECIPE on this episode. He’s especially looking forward to this cheesecake. He even took notes for me on ingredients. 🙂 Your boys are adorable. Would love to see more of “The Juju Show!” Too funny! I love that they tease you about the way you say “Fish”. Looks like you have a very happy family! 🙂

  20. Patti, this is DELICIOSO!! This is the second time I make this cheese cake. My family doesn’t eat too much sweets, so I only did 1/2 of the dulce de leche topping, & added a little extra pecans all over the top. They loved it!

  21. Pati , el postre de leche cheese cake esta super delicioso, tengo dieta de glutten free por ESo yo hice mis galettas ️gracias mil exito

  22. Hi Pati, I saw your show for the first time yesterday and had to DVR it. I saw you and Juju making the cheesecake and it looked sooooo good. What I found funny was that I used to call my daughter Juju too. Anyway my question to you is that on the TV show it looks like you are using 2 packs 8oz each of creamcheese but the written receipe only calls for 1 package? Please clarify. Thank you.

  23. Paty
Cocinas delicioso gracias por enseñar la camisa mexicana me encanta no me pierdo tus shows con mi esposa le encanta también y me enseñas tips para añadir lo A mi cocina gracias sigue con tu show felicidades

  24. Oh,I see what she means. There is a dark thin layer…as if the dulcet de Leche was spread thin, then the sour cream mix is on top of that. Never noticed that before. 🙂

  25. Okay, I’m confused. If I follow the recipe as written, I will have 3 layers. From bottom to top: Crust, cheesecake, dulce.

However, the photo on this post shows it from bottom to top: crust, dulce, cheesecake.

Is it possible to make it as shown on the photo? Won’t the dulce layer break down in the oven while the cheesecake layer bakes?

    1. Hola Carolina, Happy you want to try my recipe! If you follow the recipe as written, it should come out like the photo. That’s how it looks after it bakes.

  26. saw your show & i’m a bit confused. the picture shows 3 layers (from bottom: crust, cheesecake, dulce de leche topping – correct?)in yesterday’s episode, you poured the dulce de leche mixture on TOP of the cooled & set cheesecake batter. you did NOT blend it in with the cheesecake batter. so why does the 2nd layer (presumably cheesecake) on this site look more like chocolate? & why is it so much thinner than the dulce de leche topping? i’d love to make this soon. please advise. thank you!! 🙂

    1. Hola Billie, You are correct! The dulce de leche mixture is not mixed with the cheesecake batter. Follow the recipe as written & you will have 3 layers. I’m so happy you are making my recipe – hope you enjoy!!

  27. I saw you make this Dulce de Leche cheesecake and knew it was what I wanted for my birthday cake, even if it meant making it myself. It was amazing and easy! Thank you, Pati.

  28. This recipe was my first time ever making cheesecake… And I don’t think I’ll ever use another recipe!!! I think I’ve made it about five times and let’s just say it doesn’t last very long so I have to make sure to take my slice first 🙂

  29. You make everything that looks complicated to make so easy and afforable! I didn’t have much expectation on my first attempt to make the cheesecake, but I was so surprised how good it turned out! I was going to buy a cheesecake from the Cheesecake Factory for a birthday party, but I’m saving my money and making this cheesecake instead. Thank you for a wonderful recipe!

  30. Hi Pati!
I saw your show for the first time yesterday by chance, and I have to say I have been missing out!!
I have checked, and I am not able to catch your shows regularly, (due to cable provider) but I am grateful I can visit your site as often as I can.
24 hrs later and I have already made Nana Jose’s flourless recipe, my son tried it and immediately went back for seconds. I am thrilled. I am now at the cooling stages of this Deulce de leche recipe, and I can’t wait to try it tomorrow ( going to let it cool overnight as you suggested)!! I was unable to find La Lechera so I had to use what my nearest grocery store provided..(perhaps that’s why my recipe is not as “browned” as the pic? Next time I will definitely hunt down La Lechera dulce de leche.
I am already a huge fan, and can’t wait to try out more recipes!
Thank you for sharing your wonderful talent with us all!!!

  31. I love your show and especially this dulce de leche cheesecake recipe. It was a hit at my annual taquiza party! Gracias!

  32. Pati….
After seeing this episode many times, I decided to finally make the cheesecake this weekend. It was fabulous!! And so easy….I think I put it in the fridge too soon because there were little pale spots on the top from condensation dripping. Other than that, it was not hard at all. I did have to cook mine longer to get it to set, but that’s probably just my oven.
Thanks so much for all you do…I enjoy your recipes and watching your program. Love seeing the different regions of Mexico.
    Thanks for sharing!! 🙂

  33. Hi Pati!

We love your show in our house! I have been baking cheesecakes, recently, and am drooling over this one!! I have one question (a general baking question, which specifically relates to this recipe) before I bake this cheesecake.

If I use a 10 inch springform pan when baking a cheesecake, is there a difference in baking time?? Say, if I have a 9 inch pan recipe and want to use a 10 inch pan- would I cook it for less time? This recipe seems to have 9 or 10 inch pans as interchangeable, and I remember you using a 10-inch in the episode, but is there a difference in the cooking time that could possibly be noted on the recipe, for nervous bakers?

    Thanks so much!!

    Blessings,

    Tamara

    1. Hola Tamara, Thank you for watching & for your message! I hope you do try the dulce de leche cheesecake. Bake it for the 35 minutes as written in the recipe, making sure it is set and lightly browned on top before removing from the oven. For a nine-inch pan, it might take a couple minutes longer in the oven, but I would still check it at 35 minutes.

  34. Patty
Your recepie for the cheesecake is now a big success in Buenos Aires,
My cousin made it and loved it

  35. Hola Pati!!!
My low carb diet went down the drain tonight. I saw this Dulce de Leche Cheese Cake recipe and made it with the help of my stepson, which is a “cheseecakeaholic” :o) Simply delicioso!!!!
Big fan of your recipe and your tv show.

  36. Hi Pati. Just saw the show in which you made this cheesecake and wanted to give it a try. However I noticed that the recipe on your website uses a can of La Lechera in the filling while on the show you use a can of sweetened condensed milk. Does it make much difference which one you use?

  37. Patti I love your show and the way you introduce your food they always look so yummy. The new episode are more outgoing and we see more of México and your family, beautiful! I have five monsters of my own, we love the trees leche cake and its so easy to make. My next one will be duelce de leche cheesecake for fathers day, I’m sure its going to be the second best favorite. Thank you Patti, blessing Ana

    1. Hi Ana, So happy you like the new season, I like it much better than the past ones too! Delighted to hear the Dulce de Leche cheesecake will have a repeated appearance at your table… Hope it stays as a keeper!

      1. Never mind! I didn’t read the recipe closely and only saw La Lechera in the ingredient list and did not realize it CLEARLY states sweetened condensed milk! My bad.

  38. me encanto tu show , estoy en duda de la tercera capa de el cheesecake , por cuanto timpo va al horno , he tratado de ver el video otra vez pero no dice, si por favor me aclaras esto. gracias , Doris

  39. Hi Pati, I saw this episode and I just have to say I loved all your wonderful recipes!! They were so easy to make and my family just loved it!! Especially the cheesecake! Always look forward to watching your show!! 🙂

  40. Tengo un frasco de cajeta quemada hecha de leche de cabra. Se puede utilizar? Cual es la diferencia entre cajeta y dulce de leche?

I have a jar of “cajeta quemada” made of goat’s milk. Can I use that instead of the dulce de leche? What is the difference?

    1. Yes, of course. Dulce de Leche tends to be lighter, cajeta a bit more intricate. Both will work phenomenally well.

  41. Hi, My Names Cindy I Just Made This Cheesecake But My Batter Was A Lil Runny But I Don’t Know If That’s Normal Or Not? And I Got LilLTiny Lumps Of Cream Cheese In My Batter Too.

    1. It should be a little runny, and the clumps may have been from the cream cheese being too could, or maybe you needed to mix it a bit more??

  42. Hi Pati,
I always look forward to seeing your show on Saturday morning
here in the Texas Hill Country. Today I saw the Tres Leches
    Cheesecake and fell in love.
My grandson loves cheesecake most of all. He will be 24 on
June 10 and this will be his birthday cake. Can’t wait, but
meanwhile I’ll make another for a family gathering.
Your boys are great. Treasure your time with them. I am 71 and
    the time just flies.

  45. Got this today and will be making it soon. Thank you for always explaining what the ingredients are. I want to know what is the raw sugar called that you grate from a hard block. I have not found it in my local stores so I will go to a Mexican grocery and would like to know what to ask for.

  46. The cheesecake was such a hit of our big sale thank you so much for the recipe and it was still delicious I made two.

  47. Hi! Thank you for sharing your recipes. I am making the Dulce de Leche cheesecake. My home smells just heavenly. I had a hard time finding the Dulce de Leche but finally ran across it at one of my local stores. My family can hardly wait to try the cheesecake and I might add, it was very easy to make. Thank you again.

  48. My 5 year old son Gabe and I just finished watching your show and now feel inspired and hungry =). We plan on making this cheesecake tomorrow.

  49. Love Patis enthusiasm and LOVE seeing her boys on the show. Am going to make the cheesecake pretty soon. Know it will be good!

    1. Hi Wanda-I found the Dulce De Leche in the international section of my grocery store. If your store doesn’t carry it you can go to YouTube where they have tutorials on how to make Dulce de Leche or you can order it through Amazon. I will say I tried to make it following the YouTube tutorial and found it to be quite messy and time consuming. I hope you’re able to find it at your store. Happy baking!

      1. Lisa,
Just made my first batch of dulce de leche in the oven. Easy, no mess, little work and I can’t stop eating it. Google “dulce de leche oven method”. If I can do it anyone can. Takes about 1.5 hours of baking.

  50. Loved this episode! Your children are delightful, and JuJu’s performance was hilarious! Will be making the cheesecake for an event tomorrow.

  51. My husband and I enjoy watching your show together. Today will be the third time I make this dessert. It’s oh so good!!! And easy to make. Your boys are adorable, Juju has stolen our heart. Looking forward to more recipes.

    ¡Saludos y buen provecho!

  52. Hi,
I saw this episode the other week and have made everything except cheesecake. Which I am making on tomorrow. My family have enjoyed everything I’ve made so far. My are helping me with the cheesecake as well, they’re so excited.
    Thank you.

  53. My 6 year old daughter and I tried your recipe and let me tell you everyone loved it. We saw the episode together and she quickly said “Mami I want to make that cake like Juju”.
