Ingredients
For the crust:
- 1 1/2 cups finely ground Maria cookies vanilla wafers or graham crackers
- 6 tablespoons unsalted butter melted, plus more for greasing the pan
For the cream cheese filling:
- 1 pound cream cheese at room temperature
- 1 14-ounce can sweetened condensed milk
- 3 large eggs at room temperature
For the dulce de leche topping:
- 1 1/2 cups sour cream
- 1 14-ounce can dulce de leche or cajeta
- 1 cup chopped pecans
To Prepare
- Butter a 9- to 10-inch springform pan and set aside.
To make the crust:
- In a large bowl combine the ground cookies and melted butter until thoroughly mixed. Turn the cookie mixture into the springform pan. With your fingers, pat it evenly around the bottom of the pan, gently pushing it up the sides to make a crust 1/2- to 1-inch tall. Refrigerate while you make the cream cheese filling and dulce de leche topping.
To make cream cheese filling:
- Place the cream cheese in the bowl of an electric mixer and beat at medium speed until smooth and light, 3 to 4 minutes. Add the sweetened condensed milk and continue beating until well mixed, scraping down the bowl as needed. Add the eggs one at a time, again scraping down the bowl as needed, and continue beating until the mixture is well blended and smooth, set aside.
To make the dulce de leche topping:
- In a medium bowl, mix the sour cream with the dulce de leche until combined.
- Adjust the oven rack to the lower third of the oven and preheat to 350°F.
- Remove the springform pan from the refrigerator. Gently spread the cream cheese filling evenly, trying not to distress the crust. Place the cheesecake in the oven and bake for 35 minutes, or until it is set and the top is lightly browned. Remove from the oven and let cool for at least 10 minutes before you add the dulce de leche topping.
- Spoon the dulce de leche topping over the cream cheese filling, add the pecans all around the edge and place the pan back in the oven for 10 more minutes. Remove from the oven and let the cheesecake cool to room temperature. Cover and refrigerate for at least 4 hours before serving. It tastes even better if it chills overnight.
- Before serving, run the tip of a wet knife around the edge of the pan to release the cheesecake. Remove the ring, then slice and serve the cake.

Forgot to mention in my previous comment about the Marias cookies as a crust. I will never use graham crackers again. Despite many attempts for several years, I can never get the crust to work. There were many times where the crust on the bottom fell apart. No effect on the taste but disappointing with frequent soggy or uncooked crust.
The Marias cookies made a perfect crust. Your requirements and portions worked as desired. A first time success! The flavor of the Marias was much better than the graham crackers too.

I LOVE the Dulce de leche topping for this! I did have one question.
I tend to bake my cheesecakes in a water bath, because I love a lighter, fluffier cheesecake texture. Would that technique work well in this one, too? But then just bake the cheesecake dry in the last few minutes before adding the topping?

It sounds like a great idea to me Carlos, not done that way before, but let me know how it comes out 😉

Hi Pati! I’m a fan of yours. I have made this cheesecake twice and my family loves it. Even my husband loves it although he will protest at the thought of eating sour cream and cream cheese. I have also made your ceviche several times……better than an upscale restaurant’s in Southern California. Now on to trying some of your fish and chicken recipes. Thanks for opening my eyes to the world of chiles.

My pleasure Linda, I hope that your son and granddaughter will love this cheesecake 🙂 Dulce de leche is available everywhere now, you can find it in the aisle next to the condensed milk or if you go to a Latin or Hispanic Market they will have more than one brand. Enjoy!

Made this for family and friends. Everyone loved it. A family friends daughter loves milk shakes and asked if a slice could be used to make a shake. This was my first Cheescake. So delicious. Bought a spring form pan just for this recipe. Today I’m trying it I’m Reynolds aluminum cake pans. My experiment is to see if I can make two small cheesecakes with the ingredients listed so I can gift for the holidays. Any temp suggestions? I’m going to try 350 for less time. I will let you know how it goes, but if you have any suggestions, please send them my way.

Success!! Made two cheesecakes out of one in the Reynolds pans. They already come with parchment and a lid. Perfect for gifting. We ate one and gifted the other. Now to the other ten. Yikes. I’ll spread them out this month. The temp and cooking times stayed the same and it was perfect. I added som festive sprinkles at the edge of the pecans. Thanks for such an easy and beautiful recipe.

I’ve used this recipe to make 2 – 6″ cheesecakes using springform pans but I’m intrigued with your use of disposable pans. Do you mind sharing which kind you used? Was it the 8″ round cake pans with lids that come in a 3 pack? Did you then slice and serve them like you would a pie? Thanks for this great idea!

Wow! what a delicious recipe! My husband loves anything with pecans. (he is from Torreón) Have you ever been to Parras de la Fuente? We went there two years ago and I was amazed at the number of pecan trees! Also, it’s such an oasis right there in the desert of Coahuila. It’s one of the “magic towns.” Oldest winery in the Americas is there also. Anyway, this cheesecake is yum!

I used to bake cheesecakes in my restaurant, but they were always so time consuming! This is a delicious cheesecake and so easy to make. Everyone I make it for just loves it! Just one question- if I were to make it with a different topping, what would you recommend? I used cajeta for my cheesecakes, but am wondering if any sort of fruit topping would work as well?
Pati Jinich

How about chocolate, or hazelnut spread? Yummm! I think fruit will work as well, I could see myself using mango, peach or raspberries 😉

This was a hit at my dinner event with friends tonight. It was very simple to put together and I used vanilla wafers for the crust. I made it 24 hours ahead so it had plenty of time to chill (I’ve learned my lesson in the past that you can’t rush a cheesecake to cool down). The only issue I had was how long it took to cook in the oven. I live near Oklahoma City (1,200 ft elevation). It took just over an hour to set in a gas oven. I will definitely add to my dessert list. Thanks Pati!!!

Hi Pati,

Oh My Goodness!!! Best birthday cake ever!!! The original recpe was great but the tweaked recipe was even better. Pati, if you like cinnamon and caramel together you have to try adding 1 teaspoonful of cinnamon to the cheesecake batter. Using the chocolate marias didn’t make a big difference to me, but then I’m into caramel not chocolate, lol. Thank you for this recipe!

I have this in the oven right now! Can’t wait to see how it turns out. I did take a few liberties with the recipe though. When I went to buy the Marias, they were out of the regular ones but they had chocolate ones. It seemed like a natural so I got them. Also, I love love love cinnamon with any kind of caramel, dulce de leche, or cajeta. So I added a teaspoonful to the cheesecake batter. I tasted the batter before I poured it into the crust and it was awesome! I’ll let you know how it comes out with thdulce de leche topping.

I love cheesecake and your show!!! This receipe was shown this during one of today’s episodes and I can’t wait to make it but I have a question though…what would be a good substitute for the pecans, nuts etc. How about maybe chocolate chips or toffee chips…what do you think? Any ideas would be most welcomed!
Pati

I’ve had luck leaving out the nuts and putting fresh berries on top before… but chocolate chips do sound interesting… let me know how it turns out!

Hi, I was so excited to try this recipe but was a bit nervous about it not ever making cheesecake. I searched for a video of the show and was unable to find it. I like to see the episode right before I try it out. I had a bit of trouble but the final result was fantastic! Mine did not come out like the picture even though I followed every step. Not sure what happened but it tasted very good.

Pati, I saw your Dulce de Leche cheesecake show. Looked awesome. Anything made with Cajeta has to be great! I have made this recipe twice and there never much in leftovers after my grandsons get done with it. my daughter and I and gluten intolerant so I did substitute GF crackers in the crust. Can’t wait to make this again.

My husband and I watch your show on Sunday nights after all the kids go to bed. Sunday night my husband requested we try EVERY SINGLE RECIPE on this episode. He’s especially looking forward to this cheesecake. He even took notes for me on ingredients. 🙂 Your boys are adorable. Would love to see more of “The Juju Show!” Too funny! I love that they tease you about the way you say “Fish”. Looks like you have a very happy family! 🙂

Hi Pati, I saw your show for the first time yesterday and had to DVR it. I saw you and Juju making the cheesecake and it looked sooooo good. What I found funny was that I used to call my daughter Juju too. Anyway my question to you is that on the TV show it looks like you are using 2 packs 8oz each of creamcheese but the written receipe only calls for 1 package? Please clarify. Thank you.

Oh,I see what she means. There is a dark thin layer…as if the dulcet de Leche was spread thin, then the sour cream mix is on top of that. Never noticed that before. 🙂
Carolina
Nov 25
Okay, I’m confused. If I follow the recipe as written, I will have 3 layers. From bottom to top: Crust, cheesecake, dulce.
However, the photo on this post shows it from bottom to top: crust, dulce, cheesecake.
Is it possible to make it as shown on the photo? Won’t the dulce layer break down in the oven while the cheesecake layer bakes?
Pati
Nov 25
Hola Carolina, Happy you want to try my recipe! If you follow the recipe as written, it should come out like the photo. That’s how it looks after it bakes.

saw your show & i’m a bit confused. the picture shows 3 layers (from bottom: crust, cheesecake, dulce de leche topping – correct?)in yesterday’s episode, you poured the dulce de leche mixture on TOP of the cooled & set cheesecake batter. you did NOT blend it in with the cheesecake batter. so why does the 2nd layer (presumably cheesecake) on this site look more like chocolate? & why is it so much thinner than the dulce de leche topping? i’d love to make this soon. please advise. thank you!! 🙂
Pati
Oct 13
Hola Billie, You are correct! The dulce de leche mixture is not mixed with the cheesecake batter. Follow the recipe as written & you will have 3 layers. I’m so happy you are making my recipe – hope you enjoy!!

Hi Pati!
I saw your show for the first time yesterday by chance, and I have to say I have been missing out!!
I have checked, and I am not able to catch your shows regularly, (due to cable provider) but I am grateful I can visit your site as often as I can.
24 hrs later and I have already made Nana Jose’s flourless recipe, my son tried it and immediately went back for seconds. I am thrilled. I am now at the cooling stages of this Deulce de leche recipe, and I can’t wait to try it tomorrow ( going to let it cool overnight as you suggested)!! I was unable to find La Lechera so I had to use what my nearest grocery store provided..(perhaps that’s why my recipe is not as “browned” as the pic? Next time I will definitely hunt down La Lechera dulce de leche.
I am already a huge fan, and can’t wait to try out more recipes!
Thank you for sharing your wonderful talent with us all!!!

Pati….
After seeing this episode many times, I decided to finally make the cheesecake this weekend. It was fabulous!! And so easy….I think I put it in the fridge too soon because there were little pale spots on the top from condensation dripping. Other than that, it was not hard at all. I did have to cook mine longer to get it to set, but that’s probably just my oven.
Thanks so much for all you do…I enjoy your recipes and watching your program. Love seeing the different regions of Mexico.
Thanks for sharing!! 🙂

Hi Pati!
We love your show in our house! I have been baking cheesecakes, recently, and am drooling over this one!! I have one question (a general baking question, which specifically relates to this recipe) before I bake this cheesecake.
If I use a 10 inch springform pan when baking a cheesecake, is there a difference in baking time?? Say, if I have a 9 inch pan recipe and want to use a 10 inch pan- would I cook it for less time? This recipe seems to have 9 or 10 inch pans as interchangeable, and I remember you using a 10-inch in the episode, but is there a difference in the cooking time that could possibly be noted on the recipe, for nervous bakers?
Thanks so much!!
Blessings,
Tamara

Jul 07
Hola Tamara, Thank you for watching & for your message! I hope you do try the dulce de leche cheesecake. Bake it for the 35 minutes as written in the recipe, making sure it is set and lightly browned on top before removing from the oven. For a nine-inch pan, it might take a couple minutes longer in the oven, but I would still check it at 35 minutes.

Hi Pati. Just saw the show in which you made this cheesecake and wanted to give it a try. However I noticed that the recipe on your website uses a can of La Lechera in the filling while on the show you use a can of sweetened condensed milk. Does it make much difference which one you use?

Tengo un frasco de cajeta quemada hecha de leche de cabra. Se puede utilizar? Cual es la diferencia entre cajeta y dulce de leche?
I have a jar of “cajeta quemada” made of goat’s milk. Can I use that instead of the dulce de leche? What is the difference?
Pati
May 12
Yes, of course. Dulce de Leche tends to be lighter, cajeta a bit more intricate. Both will work phenomenally well.

How do I find/make dulce de leche?
Lisa
Feb 24
Hi Wanda-I found the Dulce De Leche in the international section of my grocery store. If your store doesn’t carry it you can go to YouTube where they have tutorials on how to make Dulce de Leche or you can order it through Amazon. I will say I tried to make it following the YouTube tutorial and found it to be quite messy and time consuming. I hope you’re able to find it at your store. Happy baking!

Lisa,
Just made my first batch of dulce de leche in the oven. Easy, no mess, little work and I can’t stop eating it. Google “dulce de leche oven method”. If I can do it anyone can. Takes about 1.5 hours of baking.
